PopUp Bagels is bringing its hot, whole bagels to Katy, with a grand-opening celebration set for Friday at 23501 Cinco Ranch Blvd. in LaCenterra at Cinco Ranch. The new shop marks the Connecticut-born chain's second Greater Houston outpost, following its debut location in Town and Country Village earlier this year.
The Cinco Ranch shop will occupy Suite 1130 at the shopping center, according to Community Impact Newspaper, which reported that PopUp Bagels officials announced the opening in an Oct. 19 news release. The address matches earlier permit filings reviewed by My Neighborhood News, which reported the proposed shop would occupy Suite 1130 at 23501 Cinco Ranch Boulevard.
A state permit filing listed an estimated construction cost of $350,000 for the 1,337-square-foot space, per the same outlet's reporting. That filing also showed renovation work scheduled to begin Aug. 1, 2026, and reach completion by Sept. 15, 2026, inside what had been a second-generation retail space previously home to a salon.
What's on the Menu at PopUp Bagels
PopUp Bagels doesn't do sandwiches or toast. Instead, the chain focuses on hot, whole bagels sold by the bag and paired with containers of cream cheese, butter and rotating specialty schmears, according to the My Neighborhood News report. Customers can choose from plain, everything and poppy seed bagels, and the company encourages shoppers to “grip, rip, and dip” their bagels directly into the spreads rather than slicing them, as CultureMap Houston has reported.
The approach stands in contrast to more traditional Houston-area shops. At Houston's Bagel Shop Bakery, for instance, bagels can be purchased individually for $2 each or $25 for a baker's dozen with two 8-ounce containers of cream cheese, per CultureMap's reporting.
From a Connecticut Pop-Up to a Growing Texas Footprint
PopUp Bagels was born in Westport, Connecticut, in 2020, founded by Adam Goldberg, according to What Now Houston. Since being acquired by equity growth firm Stripes in 2023, the company has announced plans to open more than 300 locations nationwide, CultureMap reported, with Texas franchisee Lone Star Bagels planning to open more than 10 locations statewide.
Reports differ on exactly how large the chain has grown. My Neighborhood News reported PopUp Bagels has since grown to approximately 45 locations nationwide, including three in Texas, citing the company's official directory. What Now Houston, meanwhile, reported there are now nearly 50 PopUp Bagels locations across the country, including four in Texas. Either way, the chain isn't stopping in Katy — What Now Houston also reported plans for a shop in Houston's Heights neighborhood, inside Building 1 of the M-K-T mixed-use development at 600 N Shepard, Suites 117 and 120, a 1,240-square-foot space with an estimated construction cost matching the Cinco Ranch project at $350,000.
As of the earlier permit reporting, PopUp Bagels had not announced a confirmed grand-opening date or released operating hours for the Cinco Ranch location, though the company has since set Friday as the date for its celebration there. The first Houston location opened at 700 Town and Country Blvd., Suite 2640, in June, giving Katy-area bagel fans a second spot to grab their fix without crossing town.
