A construction barrier outside one of the last open storefronts at District 15Fifteen now carries an orange coming soon sign for Meximodo Cocina Mexicana and Tequila Bar, confirming that the record-setting Mexican restaurant chain is headed to the Route 10 development. No opening date has been set, according to Parsippany Focus, which spotted the sign on the construction barrier outside the space.
Meximodo is preparing to open a new location at District 15Fifteen, the mixed-use development situated between Johnson Road and Dryden Way, per the same report from Parsippany Focus. Other outlets have offered a loose timeline for the arrival: Patch reported the Parsippany restaurant is set to open sometime in 2026, while NJ 1015 reported the company was looking to open its Parsippany and Marlboro locations in late 2026. District 15Fifteen itself is described by its developers as a new mixed-use town center at 1515 Route 10 in Parsippany, according to District 1515's own FAQ page.
A Record-Setting Tequila Collection
Meximodo is owned by Le Malt Hospitality Group, which is led by founder and CEO Saurabh Abrol, who also operates Le Malt Lounge in Colonia and Le Malt Royale in Red Bank. The concept debuted on Pearl Street in Metuchen, where according to Jersey Digs, the flagship location opened in 2023, before the company later opened a second location at the Haus25 tower in downtown Jersey City.
The restaurant's calling card is its agave spirits collection, which has earned it recognition from Guinness World Records for the largest commercially available selection of agave spirits. Meximodo now stocks 1,033 bottles of tequila, mezcal and other agave spirits. NJ 1015 reported that the company was awarded that Guinness World Record in July 2024 for the Most Varieties of Agave Spirits Commercially Available in a bar-restaurant. The Jersey City location, which Jersey Digs describes as an 8,000-square-foot space with soaring ceilings and a private-event area called the Rose Room, opened in spring 2025, according to NJ 1015.
Beyond the bottles, the menu leans into handcrafted tacos, signature margaritas, bold entrees and craft cocktails, per NJ 1015's reporting. The concept's roots trace back to a research trip Abrol took with his team to Mexico City for inspiration before launching Meximodo, during which the group visited the Coyoacán market and the town of Tequila. The company also has a planned location in Marlboro in addition to the Parsippany project.
Filling Out District 15Fifteen's Restaurant Row
Meximodo would join a growing lineup of tenants at the development, which is being built by Stanbery Development Group, Claremont Development and PCCP LLC, according to WRNJ Radio. Kura Revolving Sushi Bar and O'Bagel are already open at District 15Fifteen, and Burton's Grill and Bar is also open there after holding its VIP grand opening on Oct. 19, which NorthJersey.com reported was the chain's first New Jersey location. Basha and Haraz Coffee House are both preparing to open at the development as well.
Jersey Digs previously reported that Kura Revolving Sushi and Burton's Grill & Bar had made earlier commitments to the project before those doors opened. Separately, ROI-NJ reported that five additional businesses were slated to open at District 15Fifteen over the eight weeks following its own announcement, while Stanbery Development Group has said business openings there were projected for spring and summer 2026 as the project reached a 65% retail-leasing milestone.
District 15Fifteen includes 498 luxury apartments alongside its retail component, which Parsippany Focus describes as nearly 59,000 square feet of retail space — a figure that Jersey Digs has separately put at 58,600 square feet of retail and restaurant space alongside a planned Residence Inn by Marriott. With Meximodo's sign now up and its Guinness World Record collection headed to Route 10, Parsippany diners will have one more reason to watch the development as additional tenants continue to fill in around it.
