
Saikō Coffee, the matcha-and-mixology bar that built a following out of a strip mall inside Orlando Racket Sports, is expanding to Winter Park with a stand-alone shop.
From a Racket Club Refreshment Stand to a Citywide Name
Saikō’s original shop sits at 7059 S. Orange Blossom Trail inside Orlando Racket Sports, a spot the company opened as what The Community Paper describes as a refreshment stand for facility users, with an emphasis on coffee, matchas, smoothies and cold-pressed juices. It has since grown into what Orlando Weekly once called a sleek modern bar where specialty coffee meets mixology, tucked into the Sky Lake/Pine Castle corridor. The shop is the creation of Josue Villacis, who founded and owns Saikō and previously worked as head of mixology at two-Michelin-starred Sorekara, according to bungalower.com.
The Winter Park location will be a stand-alone space, with renovation expected to take about six months. It is designed around guest connection — Villacis has said he wants a place where people spend time together rather than work alone on laptops, emphasizing connection, per the same bungalower.com report.

In September 2026, Villacis was not yet ready to disclose exactly where in Winter Park Saikō was headed, with more details still to come, Bungalower reported.
Plans for the New Shop
The original shop serves matcha, coffee, smoothies and cold-pressed juices.
Guests will reportedly be able to watch their drinks built from start to finish, and some of Saikō’s house-made syrups will be bottled and sold to take home as well.

A Crowded, Growing Matcha Scene
Saikō’s expansion lands amid a broader matcha boom. The Community Paper reports that Saikō currently produces about 12,000 matcha drinks a month, using roughly 50 kilograms of matcha powder in that span — part of a category the outlet says was estimated at a $4.3 billion global market in 2023, with projections to reach $7.43 billion by 2030. Orlando’s own matcha scene has been filling in around that growth too, from Matcha K, a matcha and coffee bar inside the Winter Park clothing store Klassy, to the sold-out MatchaFest held at Wall Street Plaza, per the same Community Paper report.
Saikō has also leaned into seasonal menu shifts at its original shop, previously noting plans to bring hot specialty coffee into rotation once winter arrives, according to Orlando Weekly’s earlier coverage of the brand.
