Castle Rock's primary existing Thai eatery is Beau Thai II on New Beale Street, opened in 2018 by Nepalese-born chefs who blend traditional Thai recipes with subtle Indian culinary influences, according to The Castle Pines Connection. That restaurant was established as a secondary location following the owners' original restaurant in Evergreen, Colorado, the outlet reported.
