A new takeout spot slinging Australian Wagyu cheesesteaks and curly fries has set up shop at 15 Church Street in Saratoga Springs. Cheesesteak Alley is a pop-up operating out of the Patio kitchen, and its sandwiches reportedly sell out fast.
According to WNYT, the business opened Tuesday at 15 Church Street. The Dishing offers a different timeline, reporting that Cheesesteak Alley was slated to officially launch on October 21, 2026, as detailed in a report from The Dishing, which describes the operation as a ghost kitchen concept running out of the Patio kitchen at 15 Church.
The menu itself is built around a single signature item: a cheesesteak made with shaved Australian Wagyu beef, confit Vidalia onions, poblano, pickled peppers, Cooper Sharp cheese and a semolina loaf, per Cheesesteak Alley's own site. Curly fries round out the order, and the business has said its sandwiches tend to sell out quickly.
Pickup, Delivery and Preordering
Cheesesteak Alley is take-out only, located on the Patio of 15 Church Street, according to News10. Customers can pick up orders at the Patio entrance or have them delivered, and the business is open Wednesday through Saturday from 4 to 10 p.m., or until it sells out, per its own online ordering page.
Online preordering is also available, letting hungry regulars beat the rush — and when a given day's supply runs out, orders can be placed for another day instead, the ordering site notes. The same account says noodles, burgers and hot dogs are coming soon to round out the lineup.
Born From a Staffing Idea
Chef Mike Mastrantuono said he came up with the idea for Cheesesteak Alley as a way to retain 15 Church's summer crew through the off-season, the News10 report notes. Getting the sandwich itself right took some trial and error: the team made about 120 sandwiches before landing on the final recipe, according to the same account.
Looking ahead, the business plans to expand the menu with Wagyu burgers, street noodles and a Wagyu hot dog, WNYT reports. For now, though, the draw remains the cheesesteak and curly fries combo that's already drawing a steady crowd to the Patio kitchen on Church Street.
