The pair say they noticed the Buffalo area's growing energy and strong sense of community, but found that the bakery café experience they loved in New York City was simply missing from the local landscape. For Shen, bringing Paris Baguette to Buffalo was described as a personal choice rooted in memory and connection, and he said he wanted his family and the broader community to experience the chain's consistency while creating a welcoming space where neighbors can gather over thoughtfully made food.

The new café serves artisan pastries, cakes, breads, and handcrafted beverages. Per Visit Buffalo Niagara, the Williamsville location is open daily from 6 a.m. to 9 p.m., offering dine-in seating, custom cake ordering, and espresso beverages brewed in partnership with Italian coffee brand Lavazza.

A Second Upstate Foothold After Ithaca

Williamsville is not Paris Baguette's first stop in Upstate New York. The chain previously opened a café in Ithaca, according to WGRZ-TV, with the Williamsville store now serving as the brand's gateway into the Greater Buffalo market. The building sits along the village's primary Main Street retail corridor.

Behind the counter, the format mirrors what Paris Baguette has rolled out nationwide: self-serve glass display cases stocked daily with more than 100 fresh pastry, bread, and cake items, supported by overnight baking crews that begin their shifts at midnight, as Hoodline has reported in coverage of other openings. The Williamsville store also built its local staff ahead of opening, with employment listings posted on Indeed earlier this year offering $16 per hour plus tips for retail associates and sandwich preppers.

A Korean-Owned Brand With French Branding

Despite its French name and aesthetic, Paris Baguette is a Korean concept. The chain was founded in 1988 and is owned by SPC Group, a South Korean food company, according to The Daily Meal. The brand first entered the United States in Los Angeles in 2005 and has expanded across North America. The Daily Meal reported two locations in Paris in August 2025, while Restaurant Business Online has covered the chain's U.S. expansion.

Paris Baguette now counts more than 4,000 locations worldwide, according to 1851 Franchise's original reporting on the Williamsville opening. The chain opened 77 North American cafés in 2025, with more planned for 2026.

Continuing North American Expansion

The Williamsville café is part of Paris Baguette's North American expansion, with franchisees Shen and Zhang operating the location.

The chain has also expanded beyond traditional retail corridors, with its 300th North American café opening at Philadelphia International Airport in Terminal C in May 2026, as Hoodline reported at the time.

Whether Shen and Zhang plan to scout additional Western New York sites, and how the new café will compete against existing suburban options along Main Street, remain open questions for now.
