A fast-casual breakfast brand built around freshly cracked eggs and house-made sauces is setting its sights on east Charlotte, with plans to open its second North Carolina location at Eastway Crossing in early 2027. EggBred would take over 1,988 square feet at 3052 Eastway Drive, joining a shopping center at the corner of Eastway Drive and Central Avenue that already houses a mix of local businesses and national retailers.

According to the Charlotte Observer, the news comes per Collett, which announced EggBred's Eastway Crossing location. Franchise owner Fabricio Botta said the site suits the brand because of the area's energy and growth, and added that EggBred looks forward to introducing its breakfast and brunch approach to neighbors and becoming part of the Eastway community, per the same report.

What's on the Menu

EggBred plans to serve breakfast sandwiches, loaded burritos and waffles, along with avocado toast, burgers, chicken sandwiches, mac and cheese, and a kid's menu, the outlet reports. Seasonal offerings are expected to include a pumpkin spice cold brew and a Dutch apple cheesecake waffle. The chain serves breakfast and lunch, and one review posted on EggBred's Charlotte page already singles out a signature item: “The cheesecake waffles are great.”

EggBred's website frames its mission as wanting to “become a delicious daily breakfast alternative to the corporate norm,” positioning itself against the drive-thru chains that dominate most breakfast runs. The brand opened its first North Carolina location in Greenville, at 1856 W Arlington Blvd, where it describes its food as handcrafted breakfast sandwiches made with the freshest local ingredients, according to EggBred's Greenville page.

A Shopping Center Already Filling Out

Eastway Crossing is described as a community shopping center located at the intersection of Eastway Drive and Central Avenue, per Collett's property listing. The center's current tenant roster includes East Side Yoga, a UPS Store, and Head Space Studio, described as an inclusive salon, alongside The Jade Rabbit, a barbering salon.

EggBred isn't the only market where the brand has been expanding. A Reddit post in the r/fresno community reported that EggBred planned a location in Clovis, California, at 1127 N. Willow Ave., in the former Hungry Bear Cookies space, serving sandwiches, burritos and avocado toast. That post, titled “Clovis to get trendy craft breakfast sandwich restaurant: EggBred,” drew 29 votes and 31 comments on the platform.

No exact opening date, time or operating hours have been released for the Eastway Crossing location beyond the early 2027 window. For now, east Charlotte residents eyeing a new breakfast and brunch option will have to wait for further details from EggBred or Collett.
