Morgan Hill is getting a new sushi destination at its restaurant row. Sushi Confidential, which has locations in Campbell and San Jose, is opening up a restaurant at 17340 Monterey Road in the space formerly held by Prova. The grand opening is Sunday, April 10th at noon. Owner Randy Musterer has been renovating the restaurant for the past eight months adding his unique touches like the black, white, and red interior color scheme. He’s finally ready to start filling up the 80 seats inside and the 30 seats outside in the restaurant’s parklet. 

One thing you’ll notice inside the new Sushi Confidential location is an Instagram-friendly area near the entrance with a wall that looks like a backdrop of red flowers features the words “hot like wasabi” in neon. There’s also a bar toward the back of the location that will surely be a popular gathering place for locals.

Musterer honors the rich agricultural heritage of Southern Santa Clara County by offering several different items on the “Local Love” menu that use locally harvested ingredients. “There’s the Morgan Hill Baked Mushroom Roll, with shiitakes and crab; the Santa Cruz Lobster Roll, topped with tempura langostino; and two garlicky numbers, the Crispy Gilroy Garlic Roll and the Garlic Albacore Sashimi, with garlic ponzu and crispy slices that don’t overpower the seafood,” the Mercury News reports.

The menu at the Morgan Hill location provides many options, not just sushi. There are brand new items like the Unagi Waffle Fries, Sticky Pork Bao Buns, Chicken Skewers, Shanghai Style Spring Rolls, and a Samurai Chopped Salad. Sushi Confidential will also offer customers better prices during two happy hours, one runs daily from 2:30 p.m. to 4:30 p.m. and the other runs Friday and Saturday nights from 9:00 p.m. to 10:00 p.m. to cater to the late-night crowd.

The city of Morgan Hill itself offers a different vibe compared to the two Silicon Valley locations.  “We greatly appreciate the small-town feel and the strong sense of community. Our goal is to help continue to create an exceptional dining experience and add to the thriving group of downtown restaurants,” Musterer told the Morgan Hill Times when the restaurant was first announced. 

After the grand opening, Sushi Confidential in Morgan Hill will be open Sunday through Thursday from 2:30 p.m. to 9:30 p.m. On Friday and Saturdays, the restaurant will stay open until 10:00 p.m.
