
The culinary landscape of San Francisco is getting a tantalizing twist as chef Daniel Morales Vallejo introduces his new fusion pop-up, Pacifico, in Hayes Valley. Making its debut today at Andina on Franklin Street, Pacifico serves up an innovative a la carte menu from 5 to 9 p.m., combining the rich flavors of Colombia, the artistry of Peruvian cuisine, and a dash of Asian influence. Pacifico's launch marks an exciting new chapter for Vallejo, who has honed his skills through years of diverse culinary experiences and a solid stint with the nonprofit incubator La Cocina.
"I don't want to be just Colombian. We're in San Francisco, and I want to take advantage of the great seafood and the greatest produce ever," Vallejo told SF Eater in an interview, speaking to his ambition and his journey from cooking at La Mar in Miami to his evolution as a sous chef at the Embarcadero location. Guests can anticipate a mouthwatering fusion of dishes, such as pork belly ceviche and halibut tiradito with a creamy coconut leche de tigre, paired with an array of beverages including beers, wine, and classic cocktails like the Cuba Libre. The partnership with Andina and the pop-up's location is a culinary match made in heaven, spurred by the encouragement of Victoria Lozano of Andina after the two met at La Cocina.
Announced on Pacifico's Instagram, the menu also highlights Vallejo's Colombian heritage with traditional patacones and ceviche de camarones, alongside an example of Thai and Colombian fusion, featuring green papaya, basil, and fish sauce. Also on the menu is grilled octopus, a nod to Vallejo's Peruvian influences, creatively plated with fingerling potatoes, guayaba, and Peruvian-style corn, pulling together a global experience on a single plate.
Vallejo's commitment to his craft is evident in his innovative menu and his reverence for his mentors and influences. He credits chefs like Victoriano Lopez from La Mar and Stuart Brioza of State Bird Provisions for inspiring his cooking and his dedication to hospitality. Despite his broad experience, ranging from high-end restaurants to various catering operations across South and North America, Vallejo focuses on the present, stating, "Finally we've got everything together, after all this." His vision for Pacifico outlines a desire to "take seasonal product, local product, then respect the product, and enjoy," which shines through in every dish prepared for the pop-up.
