Mayor Joe Pizzillo is vocal about the efforts to beef up the local dining and retail offerings, "Our council and staff are working very hard to bring our residents more quality retail and dining establishments and Over Easy is a great addition to our growing lineup of businesses coming to Goodyear," he expressed with enthusiasm about Over Easy breaking ground, joining a list that includes The Stillery, High Tide Seafood, Bacchus Wine Bar, and The Yard Milkshake Bar among others, as reported by the City of Goodyear.

Over Easy, which already boasts 13 locations in Arizona, is in the midst of an expansion trend with the Goodyear site being one of seven in the pipeline over the next two years. The company's CFO, Ryan Field, mentioned the drive for growth stating, "We are excited to be opening in Goodyear at the end of 2024," adding that the West Valley expansion aligns with their aspirations to serve energized takes on classic breakfast fare to committed communities like Goodyear, in addition to the positive economic impact of creating over 35 local jobs.

GSQ's diverse dining portfolio is a deliberate strategy, as noted by Mike Olsen, Chief Financial Officer for Globe Corporation, who oversees the development of the area, "We couldn’t be more excited to have landed such a great breakfast concept as Over Easy," and praising its fit within the mix of existing eateries and nightlife options it really signals the exciting times ahead as GSQ takes shape as a lively, walkable hub of commerce and culture with plans for a vast 150 acres of restaurants, shopping, and entertainment.
