San Diego's North Park neighborhood is set to get a taste of the Big Apple as Marigold Bagels steps closer to opening its first physical store. According to San Diego Magazine, former chemist and Marigold's owner, Mike Rabinowitz, has been spearheading the effort to bring authentic New York-style bagels to the West Coast. His meticulous approach to bagel-making leans into his scientific background, emphasizing the technique and quality ingredients over the mythicized New York water.
Rabinowitz's journey from a cottage food operation to a virtual kitchen has paved way for the upcoming brick-and-mortar location at 2850 El Cajon Boulevard, Suite C. Combining traditional methods with high-gluten flour and a unique touch for a crispy crust, Marigold's bagels have earned a faithful following, making the transition to a fixed location a natural progression for the brand. Rabinowitz told San Diego Magazine that the new shop, which he hopes to open by next summer, will feature both the classics and new additions like full coffee and tea menus, traditional Jewish deli items, and evening options such as beer and wine.
On the social media front, Marigold Bagels announced on Instagram that they have officially signed the lease for the new location. "This dream of recreating a classic New York bagel shop has been a long time in the making, and we couldn’t have done it without your incredible support," the post read. The announcement, shared by Marigold Bagels on Instagram, also mentioned that while they are pausing their presence at the Mission Valley Farmers Market after December 28 to focus on the shop, they will continue their online Drops for the enthusiastic customers craving their fix.
