The dynamic culinary landscape of Downtown Phoenix's Roosevelt Row is injecting a fresh pulse into its dining scene with the opening of Industry Standard, a new restaurant that is firmly planting its roots in the space formerly occupied by Carly's Bistro. After nearly two decades as a Roosevelt Row staple, Carly's Bistro closed down on May 3, paving the way for new culinary endeavors at the northwest corner of Roosevelt and Second Streets, as per Phoenix New Times.
This endeavor sees the collaboration of a trio of professionals eager to quickly become the go-to spot for locals and industry veterans. Mike Cheatham of Old Town Scottsdale's Scapegoat Beer & Wine, DashTrack founder Jordan Hudgens, and seasoned hospitality expert Mike Bodow have united to bring their vision to the table, with an official opening set for this Tuesday. In a statement obtained by Phoenix New Times, Bodow emphasized their commitment to the community, stating, "We’ve put in a ton of time making sure what we were doing was right for the community."
Chef Edward Mclachlan, hailing from his tenure at Chicago's The Girl & The Goat, joins the team to design a menu that boasts shareable plates that take inspiration from the varied backgrounds of the establishment’s founders, ranging from Southern California to Africa. The Phoenix New Times underscored the global touches evidenced in dishes like pappardelle pasta with lamb shoulder and harissa, and a vegetarian jerk jackfruit sandwich. Complementing the food offerings, the cocktail program led by veteran Valley bartender Keifer Gilbert promises to deliver crafted beverages that align with the establishment's innovative spirit.
With the vision of creating a hospitable and artistic environment, Mike Cheathem explained the goal of Industry Standard to ABC15, "Industry Standard is […] what we want to bring together [, a] huge melting pot of all things industry in one place. [We’ll] have a very bar-centric program where we want to be pumping out some of the best cocktails in Arizona [and make] some of the most delicious small bites, but most importantly, having a very vibe-centric music, art space, where people are going to come before after shifts."
