Cupertino is soon to be home to Hashi Market, a New York-based Japanese supermarket expanding to the West Coast. The store, set to occupy the former Sprouts location at 20558 Stevens Creek Blvd., will be 20,900 square feet. As reported by SFGate, the market promises a combination of services, including fresh produce, Japanese snacks, sushi, and even catering.

This is Hashi Market's first foray into California's supermarket scene, following its flagship store debut in New York two months prior. According to the Silicon Valley Business Journal, David Taxin, a partner at Meacham Oppenheimer who brokered the deal, is confident in the location's potential, given the "high-profile, very busy intersection with high traffic counts." Yet, despite the plan's announcement, a concrete opening date for the Cupertino site remains unpublicized.

Hashi Market competes with a plethora of other Asian supermarket establishments in the region, such as Mega Mart, H Mart, Jagalchi, T&T Supermarket, and Japan-based Tokyo Central. The latter operates a store not even a mile away at 19750 Stevens Creek Blvd. With the Cupertino Sprouts' closure in 2023, Hashi Market has an opportunity to fill the vacancy left behind at a bustling junction.

Ava Liu, the head of operations for Hashi Market, informed the East Bay Times that a store of this size typically employs 40 to 50 individuals. As the Silicon Valley Business Journal notes, Liu also projected the Cupertino store's opening to be within a three to four-month timespan. Furthermore, Liu relayed to the East Bay Times the company's intentions to expand within California, eyeing San Jose and Irvine as potential locations.
