
At the heart of downtown Gilbert, a new chapter unfolds with the groundbreaking of Heritage Park, a sizeable mixed-use development that promises to inject fresh energy into the area. As reported by ABC15, Flagship Restaurant Group has signed on to introduce three of its dining concepts at this much-anticipated destination. Joining the roster are Ghost Donkey, Palma, and Blue Sushi Sake Grill.
Beyond the culinary offerings, the 10-acre Heritage Park development is poised to feature a luxurious 288-unit apartment community and provide a generous provision of retail shops, alongside over 300 parking spots, a strategic move that underscores the expansion's magnitude. According to a press release, details obtained by KTAR, the park will see its first phase of openings in 2026 and aims for full completion by March 2027, ultimately hosting more than 30 combined restaurants and retail spaces.
Gilbert's Mayor Scott Anderson, in a statement provided to KTAR, hailed Heritage Park as a "signature piece of the Heritage District," one that will harmonize dining, retail, and residential opportunities to amplify the locale's existing charm. Furthermore, Ghost Donkey, a New York City-born bar known for its accolade as "Cocktail Bar of the Year" in 2020 by Imbibe, showcases Mexican-inspired bites and an impressive spirit selection. Having already seasoned Phoenix's Roosevelt Row, the establishment is looking to broaden its horizons to Dallas, Texas, and now Gilbert.
The Flagship Restaurant Group's Palma, with its ethos rooted in the spirit of happy hour, intends to keep its 11:00 a.m. to 7:00 p.m. weekday philosophy of continued celebration. The eatery, according to a press release cited by ABC15, prides itself on a menu that breaks free from culinary restrictions, featuring an array of options from brunch items to gluten-sensitive maki. Meanwhile, Blue Sushi Sake Grill, committed to "conscious Earth" seafood practices, is set to expand its Arizona footprint with this latest venue, complementing its Tempe and Surprise locations with a menu rich in sushi varieties and vegan options.
