Las Vegas will soon shine a little brighter with the opening of M Resort's second hotel tower and a new restaurant by celebrity chef Emeril Lagasse, ahead of schedule and ready to cater to the burgeoning Henderson market.

Initially projected for a later debut, the tower is now set to open doors on December 1, as confirmed by News3LV, a promising development for guests and the job market alike. The addition nearly doubles the property's lodgings from 390 to an impressive 765 rooms and suites. Meanwhile, to further augment interest, the M Resort will unveil a 15,000-square-foot ballroom on the first of October to bolster its event hosting capabilities.

Adding to the resort’s gastronomic landscape, the partnership with The Emeril Group introduces Meril, a restaurant that draws from Lagasse’s storied career to serve up contemporary American cuisine. "This new tower and restaurant from The Emeril Group expands our market-leading amenities at M Resort and provides much needed additional room capacity for group business and the overall strong demand of the Henderson locals market," Jay Snowden, President and CEO of Penn Entertainment, articulated in a statement obtained by 8 News Now.

The tower's launch and the new dining venue name, Meril—after Lagasse's daughter—mark a significant extension of the resort's portfolio since its inception in 2009. The second such development follows the same steps of a beloved New Orleans eatery, signaling the company's continued investment in providing exceptional experiences. The introduction is not only a nod toward upscale dining, but it also represents the creation of around 120 new jobs as part of the $206 million expansion project, which broke ground in December 2023, underscoring the enthusiasm Penn Entertainment has for strengthening its position not only in the gambling and hospitality realm but also as a significant employer in the region.
