
San Francisco favorite Marufuku Ramen is bringing its Hakata-style tonkotsu bowls to Downtown Summerlin, eyeing a February debut in a newly renovated space. The move gives shoppers and nearby residents a second Las Vegas Valley location from the brand after its initial local opening last year.
Design and dishes
Renderings tied to the announcement show a 2,440-square-foot dining room wrapped in warm woods and stone, with glowing lanterns, counter and table seating, plus a terrace anchored by firepits. The opening menu is set to spotlight Marufuku’s signature Hakata tonkotsu ramen, alongside chicken paitan, rice bowls topped with thick or chopped pork belly, Marufuku bites and chicken karaage. Downtown Summerlin will also be only the second Marufuku location to serve kushiyaki grilled skewers. A cocktail program built around Japanese shochu, sakes and whiskies is also in the works, according to Las Vegas Review-Journal.

Photographs taped to the former SkinnyFats storefront and Clark County building permits show the 2010 Festival Plaza Drive address in the middle of a Marufuku-focused renovation, and the restaurant shared interior renderings while announcing a February launch.
