
Machetes, a Mexico City–inspired pop-up famous for its giant folded quesadillas, is moving into Hey Love, the lobby bar at Jupiter NEXT, for a residency that will bring tacos, ceviche and late-night al pastor to East Burnside. The takeover slides neatly into a growing trend of Portland hotels teaming up with local pop-ups to keep their food programs interesting and draw in neighbors, not just travelers. For Portland diners, it means a beloved roaming operation will be a lot easier to find without chasing standtimes around town.
According to OregonLive, the residency is run by husband-and-wife team Diego and McKenna Palacios. Hey Love, at 920 E. Burnside St., will open Sunday through Thursday from 3 p.m. to midnight, and Friday and Saturday into the early morning. The outlet reports that the menu will feature carnitas tacos, shrimp ceviche and beet salads, with plans to carve charcoal-grilled al pastor from a trompo on the sidewalk during late-night service. McKenna called the setup “a cool trend giving up-and-coming chefs opportunities,” while Diego said they were not focused on opening a standalone restaurant and instead saw the benefit of partnering with an established space.
What Machetes Will Serve
Machetes built its following on a long, folded “machete” quesadilla made from heirloom corn masa and packed with rotating fillings that have included house chorizo with new potatoes, grilled cactus and chicken tinga. Eater Portland profiled the Palacios’ OK Omens residency and noted that the duo have been running pop-ups around the city since 2023, which helps explain the steady lines at their events. Expect the Hey Love menu to lean into that same street-food energy while lining up neatly with the bar’s cocktail program.
Late-Night Plans And Hours
Per OregonLive, Machetes will serve al pastor from 10 p.m. to 2 a.m. on Fridays and Saturdays, carving meat from a trompo set up outside Hey Love. The paper also reports that Machetes’ happy hours at Hey Love are scheduled to start Friday, Feb. 13, giving early birds a first crack at the residency. The late-night push is clearly meant to position Hey Love as both a hotel perk and a Buckman neighborhood hangout.
