Plans on file with the village and the chain's own site listings point to a sizable building with outdoor seating on a parcel near the southwest corner of Highway 50 and 115th Avenue, a spot planners say is tailor-made to snag shoppers and commuters rolling along the busy corridor.
Village signs off on the build
On July 7, 2025, the Pleasant Prairie Plan Commission signed off on zoning, site and operational plans that clear the way for Cooper's Hawk to build on roughly 2.7 acres. The approved plans call for an 11,100-square-foot restaurant and 163 on-site parking spaces, plus an estimated 100 full-time and 50 part-time jobs, delivery windows and typical weekday hours of about 11 a.m. to 9 p.m., according to the Village of Pleasant Prairie.
Listings hint at ramp-up and hiring
Cooper's Hawk lists the Pleasant Prairie location at 7530 115th Ave and outlines the tasting-room programming and hours the chain typically brings into new markets. Over on the careers side, Cooper's Hawk is already advertising management and kitchen roles tied to that address. Taken together, those listings suggest the restaurant is staffing up for a pre-opening phase, the usual point when a buildout starts shifting toward welcoming customers.
Prime spot, bigger dining play
The site sits across Highway 50 from a Buona and just a stone's throw from the Pleasant Prairie Premium Outlets and I-94, a cluster that local observers say should help fill seats on evenings and weekends. Planners have pitched Cooper's Hawk as the kind of full-service, sit-down option that has been missing along a stretch better known for scattered retail and fast-casual stops, a move that could keep more dining dollars in the village instead of sending residents up or down the interstate, as reported by BizTimes.
When diners might get in the door
The Milwaukee Business Journal reported Tuesday that Cooper's Hawk is nearing its Pleasant Prairie opening, while village records initially projected construction to wrap in summer 2026, according to the Village of Pleasant Prairie. Until the company drops a firm grand-opening date, residents are left reading the tea leaves, with the chain's "Coming Soon" listing and active job postings serving as the clearest public signs that the dining room is almost ready to pour.
