Elk Grove’s Grant Line Road is about to smell a lot more like fresh pastries and espresso. Saddle Coffee & Treats, a new western-inspired café, is slated to ride into town this summer with saddle stools, warm wood tones and a bakery-first setup that lets guests catch the aroma of goods in the oven.

Owner Feng Liang, who already runs Umai Bar & Grill nearby and recently announced the closure of her hand-roll shop, is planning a modest 1,000-square-foot space with a soft opening sometime after the start of summer. The café will pair specialty espresso, classic brewed coffee, matcha and traditional Vietnamese drip coffee with freshly baked pastries aimed at both locals and visitors.

According to What Now Sacramento, Saddle will move into a remodeled building on Grant Line Road that is known for its iconic buffalo statue. The design is expected to feel “intimate, inviting, and unmistakably western,” with Liang describing the in-view oven and mixer as part of the experience so guests can literally follow their noses to the pastry case. The outlet reports that a variety of caffeinated drinks are on deck, and lists July as a likely opening window, with a full debut planned sometime after the start of summer 2026.

Liang also operates Umai Bar & Grill close by, and that restaurant’s website lists its address on Grant Line Road. Hello Temaki, the hand-roll spot she launched earlier, closed in late February, according to Yahoo, which has effectively cleared her schedule to focus on the new café. The shift keeps Liang active in Elk Grove’s dining scene while she pivots to a smaller, coffee-forward format.

Menu and design

As outlined by What Now Sacramento, the Saddle Coffee & Treats menu will revolve around specialty espresso drinks, classic drip coffee, matcha and traditional Vietnamese drip coffee, all served alongside freshly baked pastries. The roughly 1,000-square-foot space will lean into western charm with saddle stools and warm wood finishes, while still keeping things cozy and modern. Liang told the outlet her goal is to “preserve the western charm and rural character of Wilton while adding a modern twist.”

Where it fits

Elk Grove’s strip centers have been in flux as new concepts move in and small operators experiment with format changes. another planned sushi arrival at Laguna Springs highlighted how quickly the restaurant roster is shifting across the city. Saddle’s western theme and pastry-heavy coffee service are poised to cut against the wave of recent sushi and ramen additions, giving residents a neighborhood spot that leans more local and nostalgic than flashy.

Saddle Coffee & Treats is expected to open sometime after the start of summer, with July floated as the likely debut, and Liang has said the café is meant to be as much about community as it is about caffeine. Watch for a firm opening date and any early events ahead of the soft opening. For now, Elk Grove can look forward to a small, curated hangout that brings a distinctly western flavor to the Grant Line corridor.
