
Medford’s over-the-top Korean corn dog hotspot Seoul Stix is gearing up to plant its flag in Phoenix, Oregon, with a new kitchen inside The Phoodery food hall. The Rogue Valley favorite is set to roll out its signature K-Dogs and other street-style bites to the smaller town as April gets underway.
According to KOBI, founder Amanda Diaz says the Phoenix outpost is slated to open April 1, 2026, and adds that she is "happy to continue bringing street-style Korean delicacies to the local community." The report notes that the Phoodery location will broaden the lineup with Korean fried chicken and rice bowls in addition to the shop’s trademark corn dogs, and that Diaz has not yet shared full operating hours.
From Medford To Phoenix
Seoul Stix got its start on Medford’s Main Street at 318 E. Main, where customers have been lining up for corn dogs coated in everything from ramen crumbs to crushed Takis. A Downtown Medford Association feature lists the downtown address and hours and credits the spot with becoming a late-night go-to in the Rogue Valley.

The Phoodery sits at 208 N. Main Street in Phoenix and operates as a multi-vendor food hall with several small kitchens and rotating vendors, which is where Seoul Stix will set up shop. Local listings such as GrubQuests include The Phoodery’s address along with its current roster of tenants.
Rogue Valley Food Scene
Seoul Stix’s Medford location already shows up on delivery apps and review sites with solid marks, a hint that the Phoenix offshoot could see steady traffic. Menu and review pages for the Medford shop point to roughly a 4.7 average rating on DoorDash plus multiple favorable write-ups on Restaurantji.
For opening-day specifics, Seoul Stix is steering fans to its social channels. KOBI notes the business posts on Instagram, Facebook and TikTok under the handle @seoulstickskdogs, where followers can expect exact hours and any soft-opening announcements before the April 1 launch.
