The grab-and-go breakfast and brunch concept, built around Belgian Liège-style waffles and bagels, is slated for a late-spring to early-summer 2026 opening at Burlington Mall. The compact, counter-only shop will move into the former Dunkin' space and operate without seating, aiming squarely at shoppers and passersby who want something handheld and fast. The project moved ahead this winter after the Burlington Planning Board signed off on a special permit in early February.
Waffle & Bagel will take over Unit 1076 at 75 Middlesex Turnpike, with a menu that leans hard into Liège-style waffle creations like waffles on a stick and pre-cut waffle bites in bowls, alongside bagels, fresh fruit cups and coffee, as reported by WhatNow Boston. The game plan is simple and speedy, with orders placed and picked up at the counter to keep lines moving.
Town of Burlington records show the Planning Board approved a Special Permit for a "Restaurants, Fast-Order Food" use at the mall during its Feb. 5, 2026 meeting. The filings note that only minor interior cosmetic work is planned, with no exterior renovations and no changes to the existing site plan.
