If that timeline holds, this will be Piada’s first location in the Austin area and will bring its chef-run, fast-casual pasta bowls and hand-rolled piadas to north Travis County.
Permit Filing Points To Summer Build-Out
According to a filing with the Texas Department of Licensing and Regulation, the project is listed as a tenant interior renovation at 1608 Town Center Drive, Ste. 100, with a projected completion in July, as reported by Community Impact. The filing notes that the work will overhaul the existing interior and directs readers to Piada’s site for details on what will be served.
A Familiar Menu
Piada’s menu leans on build-your-own pasta bowls, chopped salads, and its namesake piadas, which are thin, stone-baked flatbreads rolled with fresh fillings, along with sides such as piada sticks and lobster bisque, according to Piada. The brand bills itself as chef-run and is designed for quick weekday traffic with an open-kitchen counter format.
Space Sat Empty After Mattress Chain’s Exit
The unit Piada plans to occupy was left open after Factory Mattress closed following a Chapter 11 filing last year, Community Impact previously reported. That report lists the address as 1608 Town Center Drive, Ste. 100, which matches the unit cited in the new renovation filing.
Part of a Bigger Texas Play
The Pflugerville move fits into a broader Texas expansion. State project records from the Texas Department of Licensing and Regulation show recent Piada build-outs in other Texas markets, and the chain’s twin-location push into San Antonio earlier this year was muscles into San Antonio. Together, those filings and that report suggest Piada is zeroing in on suburban retail centers as it grows across the state.

Neither Piada nor the Stone Hill leasing team has announced a firm grand-opening date. For now, the July completion window in the state permit filing is the most concrete public timeline while construction moves ahead.
