McCormick Ranch is getting a taste of coastal Asian dining next spring, as Starfish Hospitality Group prepares to open Starfish Scottsdale. The restaurant is scheduled to debut on May 5, 2026, at 8390 East Vía de Ventura, filling roughly 5,200 square feet with indoor seating and a sizable patio.
According to What Now, the menu will pull from Thailand, Korea, Vietnam, China and Japan and will feature more than 70 shareable plates, including Lobster Macadamia Rolls, BBQ Pork Buns and Thai Curry Chicken. The outlet reports that hours will run from 11 a.m. to 9 p.m. Sunday through Thursday and 11 a.m. to 10 p.m. on Fridays and Saturdays, with a daily happy hour from 3 p.m. to 6 p.m. Limited reservations will be offered from May 1 to 4 ahead of the official opening.

Inside, diners can expect tropical fabrics, custom booths and artwork inspired by Southeast Asia. The layout is designed to work for everything from casual lunches to private‑dining celebrations.

Fabulous Arizona notes that the Scottsdale restaurant will be the group's first location outside California. "We want Scottsdale to experience our warmth and excellence when they walk through the doors of Starfish in McCormick Ranch," co‑founder Gretchen McConnell said in a company statement quoted by the site.
