"We're going to replicate some of the menu at Colibri," Soltero told What Now, adding that rotating specials are coming back. Colibri by Tamale Boy is the sister restaurant he referenced, and Soltero pointed to fan favorites like the fish tacos and the Burrito del Mar while noting that the kitchen plans to bring back a ribeye aguachile. On the drinks side, the bar will lean into aguas frescas and market-inspired cocktails, with rotating beer and seltzer options in the mix.

Where Tamale Boy stands now

Tamale Boy currently lists locations in Dekum, Russell and Happy Valley on its official site, and the company says those shops will keep operating while the Williams storefront steps in as the brand's HQ. The Russell location at 668 N Russell has historically handled in-city production, while the Dekum and Happy Valley spots remain regular service points.
