Copper & Rye, a new restaurant from Bloomington-based Trellis Hospitality, is slated to open in May in the space that briefly housed Lago Tacos before it shut its doors. The concept promises elevated comfort food, craft cocktails and a spacious bar-and-patio setup tailored to the Viking Lakes crowd, marking the latest shake-up in the Wilf family's fast-evolving dining campus.
According to Bring Me The News, Trellis announced Copper & Rye in a news release and confirmed the May debut. That reporting also notes that the Lago Tacos location, which only opened last summer, has already closed. In the release, Ben Berry, Trellis' operations and business development director, said the goal is a comfortable, well-executed spot where people can settle in for a drink or a full meal.
The now-vacant Lago space clocks in at roughly 6,000 square feet and features a large bar and expansive outdoor patio, per the Star Tribune. City meeting documents list the address as 730 Vikings Parkway and show that Lago planned to open July 7, 2025, according to the City of Eagan record. The generous footprint and patio make the site an easy fit for a full-service kitchen-and-bar concept like Copper & Rye.

Trellis Hospitality runs several suburban Twin Cities spots, including Southern Social, Tamarack Tap Room, Barely + Vine and Woolley’s Kitchen & Bar, according to the company site. That portfolio leans heavily on neighborhood-friendly, full-service restaurants and bars, a background that is expected to shape both the menu and the day-to-day rhythm at Copper & Rye.
