The tight, single-room restaurant works out of a compact back kitchen, turning out made-to-order har gow, shumai, pineapple buns and roasted meats. Made-to-order over carts
Forget the roaming metal carts. At Corner Bites, each dim sum order is cooked to order so it hits the table hot and fresh. Owner Steven Wu has said he worried that traditional dim sum was on its way out in the area, a concern reported by Washingtonian.
The team behind the steamers
To bring the menu to life, Wu recruited chef Zhuohuan "Joe" Zhou (also known as Sat Joe) as a partner and kitchen lead, as reported by Bethesda Magazine. There are flaky pineapple buns stuffed with egg custard, translucent har gow and silky shumai, plus honey walnut shrimp, soy chicken, clay-pot beef brisket and fried sesame balls.
