
Roost, a fast-casual spot known for chicken salads and all-day breakfast in Freiheit Village, quietly shut down its New Braunfels operation on May 3. Owner Stuart Oerteli launched the location in May 2022 and kept it going for four years.
According to Community Impact, the restaurant at 2124 Gabriels Place, Ste. 106, had offered sandwiches, salads and multiple chicken-salad options before closing its doors on May 3. The outlet also reported that the New Braunfels shop was locally owned by Oerteli and had been part of the Freiheit Village lineup since 2022.
The Freiheit Village website describes the development as a community-focused shopping and business hub that highlights dining as one of its draws, with a mix of independent restaurants, retailers and service providers. The outdoor plaza and surrounding amenities have helped position the center as a neighborhood hangout for locals and a stopover for visitors.
Menu and origins
When Roost opened in May 2022, Oerteli told Community Impact he aimed to build a local chicken-salad and deli concept, and staff emphasized that "everything we make is made in-house from scratch, never frozen, no microwaves." The menu, as listed on the restaurant's online ordering page, featured all-day breakfast, sandwiches such as the Rooster and a rotating lineup of chicken-salad flavors for both dine-in guests and catering customers, per the Roost menu.
What happens next
The closure comes as New Braunfels keeps expanding, a trend New Braunfels boomtown coverage recently noted, bringing in more dining choices and tightening competition for independently run restaurants. So far, there have been no public announcements about a new tenant for the Roost space or any plans to reopen the unit within Freiheit Village.
Local customers who relied on Roost's chicken-salad lineup and breakfast offerings will now have to look to other nearby spots while leasing and development around Freiheit Village continue to shift.
