SakeBrooklyn is bringing a full-scale sake brewery and public taproom to Gowanus, locking in roughly 6,500 square feet at 500 Degraw Street and eyeing an opening in early 2027. The new space is set to combine on-site production with a tasting room and a small-plates menu built around a steady rotation of traditional and experimental sakes.
Lease, Brokers And The Site
According to Commercial Observer, SakeBrooklyn signed for about 6,500 square feet on the northern corner of the Society Brooklyn development at 500 Degraw. Cushman & Wakefield represented the towers' ownership, while Igloo negotiated on behalf of the tenant. Igloo's Adam Joly described the project as a "destination" for the neighborhood. The outlet notes that the asking rent was not disclosed.
Founders, Concept And Menu
The company's co-founders, Dutch Fox and Leslie Fox, told Brooklyn Paper they want to broaden sake's audience by pairing traditional Japanese brewing methods with an American craft beverage sensibility. Brooklyn Paper reports that the taproom will offer small plates designed to play off the drinks and that guests will be able to try both classic and more adventurous styles. The outlet frames the project as a relaxed, social way to get into sake rather than a buttoned-up tasting-only setup.
Taproom, Experiments And 'Labs'
SakeBrooklyn's website highlights on-site brewing, a rotating tap list, and a small-batch "SakeBrooklyn Labs" program focused on experimental releases that will be available primarily in the taproom. The company leans into an easygoing approach, saying "you don't need to know sake to enjoy it," and notes that drinks will be paired with shareable bites, per the brand's site. That positioning points to an informal, hands-on tasting experience where visitors can take in the production process while they drink.
What It Means For Gowanus
The move adds another layer to Gowanus's evolving retail mix. Society Brooklyn includes roughly 517 apartments with ground-floor retail along Bond, Union and Degraw streets, according to Property Markets Group's project listing. Since the 2018 rezoning, developers and leasing brokers have been seeking food-and-drink operators to serve the growing residential base, industry coverage shows. SakeBrooklyn's arrival drops a niche beverage player into the canalfront complex and gives the area another waterfront destination.
When It Could Open
The brewery is expected to open in early 2027, as reported by Brooklyn Paper. In the meantime, SakeBrooklyn is collecting interest and early-access signups through a form on its website as the team works through buildout and permitting.
