Chef Brad Wise is steering The Wise Ox, his San Diego-born butcher-shop-and-deli concept, into UnCommons in southwest Las Vegas. The new counter is set to combine house-cut meats with a focused sandwich menu and a monthly "Ox Box" subscription, marking another off-Strip expansion for Wise's Trust Restaurant Group.
What to expect
On its website, The Wise Ox lays out a compact sandwich lineup that includes a smoked turkey, a Philly-style cheesesteak and a dry-aged burger, along with a butcher case stocked with house sausage and dry-aged steaks. The site also promotes an Ox Box subscription that delivers roughly 10 pounds of vacuum-sealed meats each month for home cooking.
Official announcement and ethos
According to the Las Vegas Review-Journal, Wise has confirmed plans to open The Wise Ox at UnCommons in 2026 and described a near-zero-waste approach that will turn trim and scraps into stocks, butters and tallow. The outlet reports that the butcher shop and deli will join other chef-driven concepts at UnCommons and follows Wise's Rare Society, a live-fire steakhouse that opened in the development in mid-2025.
Where it will sit
UnCommons presents itself as a walkable mixed-use campus in southwest Las Vegas and lists its address as 6880 Helen Toland St. The blend of residents and retailers is pitched as a way for operators to reach local diners without taking on Strip-level overheads.
Chef's track record
Wise oversees several concepts under Trust Restaurant Group and has grown his San Diego base into other markets. The Wise Ox first debuted in San Diego in 2020, according to the group's history. The Rare Society "Our Story" page and related group sites chart that evolution from neighborhood spots to larger outposts.
No specific opening day beyond "later in 2026" was included in the announcement, though the company has said the shop is slated to arrive this year as UnCommons continues to build out its dining lineup. Updates will follow once an official date or reservation link is released.
