
Chaat Dog, the Desi American hot dog concept from chef and longtime journalist Pervaiz Shallwani, is settling into a permanent home in DUMBO. The stall opens inside Time Out Market New York this Saturday, June 6, bringing chaat-topped franks to the waterfront food hall and its rooftop views. After years of brewery pop ups, cart runs and one-off collaborations, the project is graduating from weekend experiment to full-time market fixture.

According to Time Out, the core menu centers on a halal dog with chaat options like potato, corn and poblano, plus a rotating fruit chaat that is currently mango. Rounding things out are a butter chicken smash and a Desi shrimp roll. With access to a fryer at the market, Shallwani is also teasing future specials like poutine and pakora corn dogs.
From pop ups to a market stall
The Chaat Dog idea first appeared at a backyard cookout in 2017, then slowly sharpened across local breweries, beer events and pop ups. Eater NY reported that the traveling stand built a loyal following on the craft-beer circuit before landing more regular slots at festivals and on the cart scene. That steady audience helped turn the side project into a full-time stall in a high-traffic food hall.
Menu hits and future plans
Fans will see familiar favorites on the board, including Walking Chaat, a Frito pie-style corn and poblano chaat, and Chaat-Chos, along with the butter chicken smash. Everything is built around Vienna-style franks and ghee-toasted buns. Time Out also points to Shallwani's Substack, "Stinky Lunch Kids Strike Back," noting that collaborations and special events are expected to keep rolling even with the new stall. The added kitchen space at the market should give the menu room to grow while holding onto the pop up energy that drew fans in the first place.

Chaat Dog will operate from a stall inside Time Out Market New York at 55 Water Street in DUMBO, sharing the multi-level space with a slate of local and national vendors. Per the market's site, the hall includes a rooftop with bridge and skyline views and extended hours that position the stall to catch both daytime office traffic and nighttime visitors. Guests are advised to confirm individual vendor hours before heading over, since they can vary.
