
Snowy Owl Coffee Roasters has quietly taken flight in a new Brewster storefront, reopening on May 13 after more than a year of renovations and gearing up for a whole new after-dark personality. The cafe has moved a short distance to 7 Underpass Road, into a larger space the owners say lets them stretch their hours and test a nighttime concept called Night Owl, which will offer chef-prepared tapas alongside wine, beer and mocktails. Regulars are already rolling in for their morning caffeine, and the team is betting Night Owl hours will draw a different crowd once the sun goes down.
As reported by the Cape Cod Chronicle, co-owner Miguel Ainzuain said the move was driven by "some uncertainty about the future" of Snowy Owl's former Route 6A location. The new lease, he said, offers "more space for our customers and more space for our team members." The Chronicle notes the new Brewster cafe opened on May 13 and that Night Owl will probably operate five evenings a week, with specific nights still to be announced. "We're very happy with the response," Ainzuain told the paper on May 30.
Licensing and neighbors' concerns
The shift is more than just a change of address. The Select Board signed off on an Annual General On‑Premises Wine & Malt Beverages liquor license for the new spot, which allows Snowy Owl to serve beer and wine after 2 p.m., according to the town's Select Board packet. The Select Board meeting packet also notes that some neighbors raised concerns about potential noise and drinking-and-driving. The applicants told the town that staff will be TIP‑certified, and that their existing entertainment and common victualler licenses would carry over to the new address.
What Night Owl will serve
Snowy Owl's locations page already lists the Brewster Coffee House at 7 Underpass Road and marks it as "Coming Soon," and the brand's online ordering platform is showing Night Owl beverages tied to the new address. Snowy Owl Coffee Roasters describes Night Owl as a laid-back, evening-focused experience built around shared plates, acoustic music and a curated list of wines and beers, rather than a full dinner service.
Owners Miguel Ainzuain and Shayna Ferullo, who moved from San Francisco in 2013 and founded Snowy Owl in Brewster, now oversee three locations: the original roastery cafe in Sandwich, an espresso bar in Chatham and the new Brewster cafe. The business grows to about 75 employees in the summer and about 45 in the cooler months, the Cape Cod Chronicle reports. Ainzuain said the Snowy Owl name is a nod to his late father and to the local wildlife that helped inspire the brand.
The couple plans to announce Night Owl's specific evening hours on their social channels and to test the nighttime setup before committing to a full schedule. For now, daytime service is up and running at the new Brewster location while the team fine-tunes the menu and the calendar for the cafe's first official turns as Night Owl.
