
Lucia Mexican Grill at Virgin Hotels Las Vegas has rolled out an artist-designed Lucia Taco Truck just outside the restaurant, serving grab-and-go versions of the spot’s greatest hits. The colorful, stationary truck, painted in bold florals with a sugar-skull motif, officially opened July 1 and arrived alongside a new quick-service bar dubbed Lucia Fría. On offer are tacos, burritos and burrito bowls with proteins like carne asada, chicken, carnitas and al pastor, plus vegan picks and sides, all aimed at poolgoers and Strip wanderers who want something fast and casual without losing Lucia’s sit-down flavors.
What’s on the menu and when
According to a press release from Virgin Hotels Las Vegas, launch day came with a perk: the first 50 guests scored a complimentary taco. The release notes that the menu stretches beyond tacos to burritos and burrito bowls, with customizable extras such as chips, guacamole and salsa roja, plus vegan options. Virgin lists the truck’s hours as Sunday through Thursday from 11:30 a.m. to 10 p.m. and Friday and Saturday from 11:30 a.m. to midnight, and places the unit just outside Lucia near the resort’s pool and entertainment zones.
A local shop painted the truck
As reported by FOX5 Las Vegas, the truck’s look comes courtesy of Las Vegas-based Count’s Kustoms, the vehicle shop featured on the History Channel series Counting Cars. The vivid sugar-skull and floral artwork is designed to mirror Lucia’s Día de los Muertos-inspired interior and to serve as an eye-catching backdrop for quick bites. FOX5’s segment shows video and still photos of the truck stationed on the hotel forecourt, framing the pool and patio areas in full color.
The idea goes back to opening plans
The truck brings to life a pickup-window concept that was floated when Lucia first opened last year; the Las Vegas Review-Journal noted that a taco truck-style pickup window was scheduled to arrive the summer after the restaurant’s debut. The paper reported that Lucia’s larger dining footprint, bright murals and weekend Fiesta Brunch made it a natural testbed for a street-food twist on its menu. The new taco truck gives the hotel a low-commitment, high-visibility way to grow its casual dining footprint on property.
