Disco Burger has fired up grills at its second brick-and-mortar location in Brookside, taking over 600 E. 63rd Street. The River Market smash-burger stand is currently running on limited hours with a streamlined menu while crews wrap up construction and move in furniture. For now, everything is coming out of a walk-up window while the dining room gets finished.
Brookside outpost expands menu and dining
According to The Kansas City Star, the Brookside spot will eventually offer indoor and outdoor seating along with that walk-up window for takeout. Co-founders Matt Chapman and Darren Carter told the outlet that the expanded menu is set to include soft-serve ice cream, shared appetizers, steak frites and a small bar.
In an interview with KCUR, co-owner Darren Carter explained that the opening is happening in stages. The current menu is available to go from a side window first, and a fuller dine-in program will follow once the kitchen setup and furnishings are complete. “We’ll probably do a lot of specials too,” he added. The Brookside address gives the team a permanent storefront and a larger kitchen so they can stretch out the menu. Local newsletters and community outlets have pointed to the opening as part of a steady run of small, chef-driven projects hitting Brookside this year.
On its Instagram, Disco Burger asked customers to “excuse our mess” while final projects and furniture roll in, noting that the interior will stay closed for now while the walk-up window handles all orders. Operating hours are limited at the moment, Thursday through Sunday from 4 to 9 p.m., according to the restaurant’s Instagram.
For anyone curious about the Brookside outpost, the easiest move right now is to order online or swing by the walk-up window. A broader menu and that small bar are on deck once the dining room officially opens.
