The minimalist, music-forward cafe has claimed a spot among the center’s street-level shops and Sky Deck food offerings, aiming squarely at the morning rush and midday errand crowd with a fast, grab-and-go menu.
The shop quietly flipped on the lights today, becoming the brand’s third San Diego location, according to The San Diego Union-Tribune. The outlet reports that Joe & the Juice, founded in Copenhagen in 2002, now operates hundreds of stores worldwide, including about 23 in California and 32 in New York. Its Del Mar Highlands debut comes as the center continues a steady streak of recent and upcoming tenant arrivals.

The menu at Joe & the Juice leans into its health-conscious reputation, combining classic coffee, cold brew and iced matcha with freshly made juices, pressed sandwiches and what the brand calls “functional” smoothies.
