The Portland stall, tucked inside the North Mississippi food-cart pod, is planning a louder entrance next Friday, July 17, with a grand-opening party that will feature promotions and giveaways.
According to The Oregonian/OregonLive, the new Eggslut stall is operating out of the 4237 N. Mississippi Ave pod and began serving customers on Wednesday. The paper also reports that the July 17 grand-opening event at Prost Marketplace will include special promotions and giveaways for early fans.
From food truck to international chain
Founded in 2011 by Alvin Cailan, Eggslut started as a Los Angeles food truck and grew into a multi-city chain with locations in Las Vegas, London, Tokyo, Seattle, Toronto and Perth. It is best known for the coddled-egg “Slut” and the Fairfax sandwich, per Wikipedia. The brand’s expansion has turned its simple egg sandwiches into an internationally recognized staple of fast-casual breakfast culture.
What’s on the menu in Portland
Portland’s Eggslut menu will feature signature sandwiches like the Fairfax and bacon, egg and cheese, plus burgers topped with fried eggs and sides such as truffled hashbrowns and french-toast sticks, according to The Oregonian/OregonLive. The paper also reported that company representative Taylor Tang confirmed via email that founder Alvin Cailan has left the business, indicating the Portland rollout is being handled by the brand’s corporate or franchise operators.

Prost Marketplace has long been one of North Mississippi’s most visible food-cart pods, and Eggslut will occupy a stall inside the outdoor courtyard that has hosted a rotation of breakfast vendors. The space at 4237 N. Mississippi Ave previously held a Fried Egg I’m In Love cart; that breakfast operator now runs a larger brick-and-mortar at 3330 N. National brands can bring attention and scrutiny when they move into market pods.
