
Spinning Dough, the Asian-fusion pizza pop-up famous for its vivid purple ube dough, has officially settled on the Peninsula, taking over oven space at Modern Eats in downtown Millbrae. Jeff Chin’s pies, including the Ube Pizza loaded with sliced potatoes, house pork sausage, ube ricotta and bechamel, are now available for dine-in at the Millbrae pizzeria. The move shifts Spinning Dough from pop-ups and ghost-kitchen stints into a full sit-down space with beer taps and a planned outdoor patio. For Chin, it marks another step in a post-pandemic pivot that has leaned on social media buzz and a devoted fan base.
What’s on the menu
The Modern Eats online menu lists the Ube Pizza at $27 and describes the toppings as sliced potatoes, house pork sausage, red onions, ube ricotta, scallions and bechamel, according to Modern Eats. The menu also highlights other Spinning Dough creations like Longanisa and the influencer collaboration Eats By Rachel Blackberry, with most specialty pies landing in the high twenties. Those pizzas share space with classic Margherita and other comfort-food staples, so Millbrae diners can go either full adventure or stick to familiar territory.
From pop-up to a Peninsula seat
Chin first built Spinning Dough as a pop-up and then a West Oakland restaurant before pivoting to commissary and ghost-kitchen operations, as documented in a profile from Bernal Connect. That piece traces how ube and longanisa pies helped the concept catch fire on social media, and it notes Chin’s return to a shared kitchen on Cortland Avenue ahead of the Millbrae partnership. For fans who have chased the pies around the Bay, a permanent Peninsula home gives them a fixed address instead of a moving target.
Where to sit and sip
Modern Eats’ dining room seats roughly 45 people, and the restaurant plans an outdoor patio that could add about 50 more seats. Its beer bar currently runs nine taps with plans to expand, as reported by Redwood City Pulse. That extra seating and an evolving tap list were part of the broader menu overhaul that brought Chin into the fold this spring, an attempt to turn a one-off pop-up vibe into a steady neighborhood hangout.
“I like to call pizza comfort food,” Chin told Redwood City Pulse, adding that his goal is to provide a spot for friends and family to come out, have a good time, good food and good service. It is a straightforward pitch: bold flavors in a relaxed, sit-down setting.
