Cowrie Coffee, the island-grown brand built on functional, health-forward drinks and surf-family roots, has rolled out a summer pop-up on the pool deck at Romer House Waikīkī. The seasonal stand is pouring early-morning, island-sourced beverages for both hotel guests and kamaʻāina, set up as a grab-and-go walk-up counter for anyone heading out with a beach-bound cup in hand.
Romer House confirms the collaboration on its events page, billing it as “Cowrie Coffee x Romer House Waikīkī” at The Backyard Pool & Bar and making clear that locals are just as welcome as guests. Romer House Waikīkī frames the pop-up as a seasonal boost to the hotel’s morning lineup and neighborhood programming, part of a broader push to lean on local partners for breakfast and coffee options.
What’s on the menu
The pop-up menu leans heavily into health-conscious territory. Signature drinks include the Cowrie, the Bee Sting, a cacao latte, lavender matcha and several cold-brew choices. KHON2 reports that the counter backs those drinks with house-made cashew milk and handcrafted syrups, keeping things relatively dairy-light and island-sourced. The brand’s approach favors locally sourced ingredients and lower-sugar builds instead of the syrup-heavy formulas common at big mainland chains.
Local roots and roasts
Cowrie traces its beginnings to a local surfing family and centers its menu on island-sourced ingredients. HI Now notes that Cowrie’s beans are small-batch roasted by Kailua Town Coffee Roasters, which supplies the brand’s cold-brew program. That partnership keeps the flavor profiles anchored to Oʻahu roasts instead of more generic mainland blends.
Pastries, parking and practical info
The Romer House pop-up does not stop at coffee. It pairs Cowrie drinks with morning bites, including pastries from Baker Dudes and bagels from Big Time Bagels, both familiar names on Oʻahu’s farmers-market circuit. Local listings, including TripAdvisor, show the two bakeries appearing regularly at markets and pop-ups around the island. Cowrie’s locations page lists the Romer House summer pop-up hours as Monday through Saturday, 6:30 a.m. to 11 a.m., and notes one hour of free valet parking for customers; see Cowrie Coffee for details.
For now, the collaboration is one more sign that Romer House is pulling local operators into its food program so beachgoers can find stronger morning options without leaving Waikīkī. The hotel and Cowrie both point visitors to their social accounts for daily menus and schedule updates, according to the Romer House events listing.
