
Blue Corn Cafe & Bakery is bringing its scratch-made pastries and artisan sourdough back to Avondale, with founder Chef Nick planning to open the brand's fourth Phoenix-area storefront there in mid-October. The move returns the bakery to a community where it once sold at local farmers' markets, and it comes just weeks after the company's original Glendale flagship abruptly announced a temporary closure.
Chef Nick told WhatNow that the bakery is looking forward to returning to the area and supporting existing customers who have been driving out to the company's Glendale and Mesa locations. Those regulars have reportedly been coming from as far as Avondale, Goodyear, Buckeye and Tolleson just to get their hands on the bakery's offerings, according to the outlet's report. The exact Avondale address has not yet been finalized, but the company plans to share it in the coming weeks and will post updates on Instagram as details firm up.
A Square Layout With Room to Linger
The new Avondale shop is expected to have a square layout with more seating than some of the brand's other locations, per the same report. Chef Nick reportedly plans to decorate the interior with greenery and water features, and the opening will bring new menu additions alongside rotating selections, with pastries, artisan sourdough and locally roasted coffee anchoring the lineup. Company materials describe daily scratch-made items including classic artisan sourdough loaves priced from $9.95 to $12.00, alongside quiches, tarts and paninis, all prepared fresh across locations, according to Blue Corn Cafe & Bakery.
Chef Nick, a Hopi tribal member, has woven Hopi cultural heritage and traditional blue corn concepts into the cafe's menu since its founding, a distinction that has become central to the family-owned business's identity, according to Local First Arizona. Glendale's Ocotillo District newsletter spotlighted the bakery in February 2025 for its community catering work and daily fresh baking, calling it a prominent neighborhood fixture.
Rapid Growth Across the Phoenix Metro
The Avondale plan is the latest step in a fast-moving expansion. The bakery opened a third storefront at 19 W. Main St. in Historic Downtown Mesa on June 2, 2026, following a soft launch led by local shop owner Chris and Chef Nick — marking the brand's first footprint outside Glendale, per a company Facebook post. Roughly two weeks before that, on May 18, 2026, the company launched Blue Corn Express at 5746 W. Glendale Ave., a fast-service format with extended 7 a.m. to 7 p.m. hours featuring boba and smoothies.
Chef Nick has also discussed potential locations in Surprise, per WhatNow's reporting, and has received an offer for a space in downtown Phoenix that remains under consideration. The company has separately signaled interest in eventually expanding into Flagstaff as demand grows, according to a June 2026 Facebook post, though no concrete timeline has been set for that market.
Glendale Flagship's Uncertain Status
The Avondale announcement lands amid an open question about the company's original home base. On August 19, 2026, Blue Corn Cafe & Bakery announced on social media that its flagship at 7015 N. 58th Ave. in downtown Glendale was temporarily closed due to what it called an unexpected situation, with management saying updates would follow on social channels as details develop. No further explanation of the closure had been shared as of publication.
For the Avondale opening, the company plans a ribbon-cutting ceremony and giveaways, which Chef Nick described as a fun event, per WhatNow. The celebration is expected to include free muffins, gift cards and prizes for attendees.
