A marijuana-themed sandwich chain known for its late-night college following has planted its second Oklahoma flag in Edmond, opening a toasted sub shop with a full-service bar, an outdoor patio and a drive-thru inside Spring Creek Plaza near 15th Street and Bryant Avenue. The new Cheba Hut sits blocks from both the University of Central Oklahoma and Edmond Memorial High School, putting the counterculture-branded eatery squarely in the middle of a family-oriented suburban corridor.
The Edmond shop is the second Oklahoma location for franchise owner Rose Taylor and her ownership group, who opened the state's first Cheba Hut on November 18, 2024, at 323 NW 23rd Street in Oklahoma City's Uptown 23rd District, according to RestaurantNews.com. That flagship store features an 18-seat U-shaped bar as its centerpiece. Taylor said Edmond had been on the group's list of target markets before the ownership group signed anything on the new location, per the same account.
Taylor's group already has a third Oklahoma location under construction in Norman and is scouting sites in Tulsa, the outlet reports, positioning Edmond as one stop in a broader march across the state's college towns and suburbs. The strategy tracks with Cheba Hut's national trajectory: the chain generated more than $150 million in systemwide sales in 2024, a 23% jump from the prior year, alongside a 15% increase in store traffic, according to Restaurant Magazine.
A Menu Built Around Toasted Subs and Munchies
Cheba Hut serves more than 30 signature toasted subs alongside made-to-order sandwiches and munchie options, per the RestaurantNews.com report. The Edmond menu carries the chain's signature strain-named subs, including the White Widow with chicken, bacon and ranch; the Kali Mist with turkey, bacon and pepper jack; and the Dank, loaded with pepperoni, salami, marinara and melted mozzarella. Vegetarian eaters can order the Griefo, built with cream cheese, avocado and fresh greens.
Subs come in three sizes at Cheba Hut — the 4-inch Nug, the 8-inch Pinner and the 12-inch Blunt — and the menu extends beyond sandwiches into a full stoner-snack lineup. The Edmond location also stocks pretzel nugs, garlic cheese bread, krispy bars, cookies and a Kool-Aid bar, according to the report. The shop is open daily from 10 a.m. to midnight.
Drive-Thru Sets Edmond Apart From Urban Locations
Unlike Cheba Hut's typical urban, foot-traffic-driven storefronts, the Edmond location adds a drive-thru to catch commuters passing through the 15th Street and Bryant Avenue corridor, according to Cheba Hut's own location page cited in the dossier. That operational choice fits Spring Creek Plaza, a 77,204-square-foot shopping center built in 1999 that has been voted Edmond's best shopping center for 10 consecutive years, per Visit Edmond.
The location's proximity to the University of Central Oklahoma is central to Cheba Hut's playbook. UCO enrolled 12,554 total students, including 10,777 undergraduates, across its 210-acre campus for the 2024–2025 academic year, according to data cited from Data USA. Cheba Hut was founded in 1998 in Tempe, Arizona, near Arizona State University, built from the start to serve late-night college crowds with toasted subs and counterculture-themed branding, per Wikipedia's account of the chain's history.
Cannabis Branding Meets a High School Down the Street
The Edmond shop's marijuana-themed identity and full-service bar sit less than a mile from Edmond Memorial High School, a juxtaposition the RestaurantNews.com report frames as a tension between suburban family life and Oklahoma's cannabis-friendly culture. Oklahoma voters legalized medical marijuana in June 2018 through State Question 788, which passed with 56.8% approval and created one of the nation's most permissive medical cannabis frameworks, not requiring patients to have specific qualifying conditions, according to Wikipedia's summary of the ballot measure.
Cheba Hut leans into that identity rather than softening it. The Edmond store includes custom artwork inspired by Oklahoma roadside Americana and Route 66, created by artist Kid Lennon, who also designed the artwork for the Uptown 23rd location in Oklahoma City. Loop AI has previously named Cheba Hut the most loved delivery brand, per the RestaurantNews.com report, underscoring the chain's reach beyond its dine-in and bar business.
Grand Opening Bash Includes a Year of Free Subs
Cheba Hut Edmond marked its debut with a grand opening bash featuring giveaways, according to the report. The first 100 guests in line received an exclusive swag bag, and the 420th customer through the door was promised a full year of free Cheba Hut. DJ Terpenoid was set to perform starting at 5 p.m. as part of the celebration.
Cheba Hut offers franchise opportunities nationwide, and the brand's corporate headquarters in Fort Collins, Colorado, hired a dedicated director of design and construction development in 2023 to standardize buildouts as the chain scales toward a target of 200 locations by 2030, according to Restaurant Magazine's earlier reporting cited in the dossier. As of late 2024, the chain had already surpassed 70 locations across 20 states. Cheba Hut's Oklahoma expansion mirrors moves the chain has made in other college markets. Hoodline previously reported on the brand's third San Antonio shop near UTSA and its plans for a Fort Worth freeway location, part of a pattern of clustering new stores near universities. With Norman under construction and Tulsa under consideration, Edmond appears to be just the latest stop for a chain still chasing its national growth targets.
