Corner Bakery Cafe is opening a new location along Dallas Parkway in Plano, marking the chain's second restaurant in the city. The 2,949-square-foot space is under renovation at Polo Towne Crossing, with an address of 2100 Dallas Parkway, Ste. 126, and no opening date has been announced yet.
The build-out is documented in a filing with the Texas Department of Licensing and Regulation, as first reported by Community Impact. According to that TDLR filing, the interior renovation carries an estimated construction cost of $250,000, with work scheduled from March 1 to May 1, and the filing identifies Dallas-based architectural firm idGROUP as the project designer.
Once open, the new cafe will serve the chain's signature menu built around artisan breads used for sandwiches, salads and soups, plus breakfast items including pancakes, panini and croissant sandwiches. The counter also typically stocks overnight oats, parfaits, muffins, bagels and cinnamon rolls, per the same account from Community Impact.
A High-Traffic Corner Along the Tollway
Polo Towne Crossing is a 257,736-square-foot shopping center anchored by a Super Target, sitting along the Dallas North Tollway corridor in West Plano, according to US Property Trust. The center draws daily traffic counts of 48,742 vehicles and sits in an area with an average household income of $230,770 within a one-mile radius, the property listing shows.
The new restaurant will be Corner Bakery's second location in Plano, joining a longtime cafe on Preston Road near the Park and Preston retail district. That original Plano restaurant operates at 2401 Preston Road, Suite 544, offering dine-in, curbside pickup and corporate catering, according to Visit Plano.
A Chain Rebuilding After Bankruptcy
The Plano expansion comes as Corner Bakery works to rebuild under new ownership. Dallas-based restaurant operator SSCP Management acquired the chain for approximately $15 million out of a Chapter 11 bankruptcy court auction in June 2023, according to Restaurant Business, which noted SSCP had previously purchased Corner Bakery's debt on the secondary market before bidding on its assets.
Corner Bakery is now led by CEO Chris Dharod under parent entity SSCP Management, a family-owned Dallas enterprise that operates more than 500 restaurants nationwide across brands including Cici's Pizza, Applebee's franchises and Sonic Drive-Ins, per SSCP Management's own company materials. SSCP was founded by CEO Sunil Dharod before the company expanded into multi-brand franchise management. Hoodline has previously reported on the parent company's growth, including when the Dallas pizza boss bought a Houston chain.
Since exiting bankruptcy, Corner Bakery has increased average unit sales volume by $200,000 per location within six months and boosted franchised store average unit sales to $2.2 million by early 2026, according to Restaurant Dive. Those gains were driven by revitalized corporate catering and stronger counter sales, the outlet reported.
Kiosks, Remodels and a New Franchise Push
Parent company SSCP Management has committed more than $6 million to update Corner Bakery store interiors and outdoor spaces while deploying self-order digital kiosks across its portfolio, with a planned 2027 completion date, according to World Coffee Portal. The kiosks are aimed at speeding up service and offsetting rising labor costs, the trade publication noted.
Corner Bakery signed its first new franchisee in nearly a decade in March 2026, part of a renewed expansion push after the chain pared its footprint from roughly 175 locations down to under 100 nationwide, Restaurant Dive reported. The chain lost dozens of urban units during the pandemic as remote work curtailed downtown office catering business.
The company's turnaround has not been without legal friction. SSCP Management pursued federal court litigation against former Corner Bakery owner Jay Pandya in late 2024, alleging breach of fiduciary duties and unauthorized asset transfers prior to the chain's 2023 Chapter 11 filing, according to Restaurant Dive's earlier coverage of the dispute, which was transferred from Texas state court to federal court jurisdiction.
Texas regulations will also shape the Plano build-out's final steps. Under state administrative rules governing architectural barriers, commercial property owners must obtain an accessibility inspection from a registered specialist within 30 days to one year following construction completion, per the Texas Department of Licensing and Regulation, which cites Title 16 Texas Administrative Code Section 68.52 as requiring the mandatory post-construction review.
No opening date has been set for the Polo Towne Crossing location, and it remains unclear how many additional corporate or franchised Corner Bakery restaurants SSCP plans to add across the Dallas-Fort Worth area. For now, Plano diners have two Corner Bakery addresses to watch: the established Preston Road cafe and the Dallas Parkway storefront taking shape near Super Target.
