New Orleans Beignets Land in Little Saigon at Copper Espresso Bar on Bellaire

Powdered sugar and espresso steam are now part of the daily rhythm at 12925 Bellaire Blvd., where Copper Espresso Bar has opened inside Houston's Little Saigon serving fluffy New Orleans-style beignets alongside a full specialty coffee menu. The shop makes its beignets fresh every day and keeps them available until an hour before closing, coating each order in powdered sugar in the Crescent City tradition.

The cafe celebrated a soft opening weekend beginning July 25, according to an official Instagram post cited by Community Impact. Beyond beignets, the menu includes ice cream, filled danishes, croissants and other baked goods, plus a full lineup of lattes, cold brews, espressos, matcha, teas and pour-overs. A signature item, the Copper No. 7, blends honey and vanilla into an espresso profile finished with Saigon cinnamon, per the shop's menu.

According to a Facebook post from the account houstonsgotspice, the owner relocated directly from New Orleans to bring authentic Louisiana-style beignets to the neighborhood, and the business has plans to add a drive-thru window at the Bellaire Boulevard location. The post also noted the shop's soft opening took place in late July. For its lattes, the cafe uses premium roasted coffee beans from Onyx Coffee Lab, per social media, an Arkansas-based roaster that day9.coffee reports was ranked the number one coffee shop in North America and second in the world by The World's 100 Best Coffee Shops in 2025.

A Cafe Inside a $20 Million Redevelopment

Copper Espresso Bar sits inside the Bellaire Market District, a $20 million, 50,000-square-foot retail center built on a 2.9-acre site in the Alief area, developed by brothers Charlie and Andy Huynh alongside reality television personality Washington Ho, according to The Real Deal. Hoodline first reported on the development's $20M Little Saigon revamp plans back in March 2024. The complex is drawing customers from across Houston to the Bellaire Market District, per the cafe's own social media accounts.

The same building is slated to house Chợ 3 Miền, a two-story, 20,000-square-foot Vietnamese-focused food hall that will bring together 25 culinary vendors representing Northern, Central, and Southern Vietnam ahead of the June 2026 World Cup, according to the Houston Chronicle. The food hall's roughly 400 seats will occupy more than a third of the development, underscoring the scale of destination dining forming around the coffee bar. Developers have also begun a $1.5 million build-out for a 5,200-square-foot karaoke bar and lounge inside the main building, a project Hoodline detailed in its report on the karaoke lounge build-out in January.

Why Beignets Fit Naturally in Little Saigon

The pairing of French pastries like beignets with coffee in Vietnamese-American neighborhoods traces back to 19th-century French colonial influence in Vietnam, which later intersected with Gulf Coast foodways after Vietnamese refugees settled in New Orleans and Houston starting in 1975, according to Culinary Backstreets. Greater Houston is home to more than 157,000 Vietnamese Americans, the largest Vietnamese population in the country outside of Los Angeles, and Vietnamese ranks as the third most commonly spoken language in the region after English and Spanish, per the Houston Chronicle. Locally, Vietnamese Americans make up roughly 10% of the population in the Alief area surrounding Bellaire Boulevard and about a third of the Asian population across Harris County, according to VN TeamWork.

Copper Espresso Bar also arrives amid a broader coffee investment boom along the corridor. Trung Nguyen Legend, a Vietnamese coffee giant, opened a 4,700-square-foot flagship sit-down cafe at 11754 Bellaire Blvd. in March, a launch Hoodline covered in its report on the chain's 4,700-square-foot Bellaire cafe. Developers have signaled they aren't finished building out the district either, announcing a $30 million Phase 2 expansion at 12983 Bellaire Blvd. that will add 75,000 square feet of mixed-use space, including rooftop pickleball courts, a rooftop bar, and fitness facilities, according to KHOU-TV, with completion targeted for 2027.
