An award-winning Valley taco concept is putting down roots in Gilbert. Tacos Tijuana plans to open its newest location at Barnone at Agritopia in October, bringing corn tortillas pressed to order, al pastor carved fresh from the trompo, and the family's signature red salsa called Salsa Adolfa to the East Valley for the first time.
The move is a homecoming of sorts for operator Wendy Torres, who has lived in Gilbert with her family for 11 years, according to WhatNow. Torres and her husband, Holmes, are bringing the family business closer to home, and the Torres family had actually visited Agritopia as customers before deciding to open a location there, per the same report. The family had also considered opening a location at Epicenter several years ago, though those plans never materialized.
Tacos Tijuana traces back to 2016, when Adolfo Torres launched the concept from a food truck that sold out on its very first day near 67th Avenue and Thunderbird, according to WhatNow's account. From there, the business has operated in Glendale and Mesa for eight years, eventually opening full restaurants in both cities. Phoenix New Times recognized the growing concept with a Best Tacos honor in its 2019 Best of Phoenix awards, following an earlier Best of the Valley nod in 2017.
From a Food Truck to a Landmark Address
Tacos Tijuana's Glendale roots go back to its first brick-and-mortar restaurant, opened in 2017 after that initial food truck launch, according to a Seasoned job listing detailing the company's history. The family business built its reputation on fast, affordable street tacos made with traditional recipes, and it avoids frozen ingredients and concentrates in the kitchen. Its horchata is made by soaking rice with whole cinnamon sticks overnight, while hibiscus flowers are steeped daily for the Jamaica beverage served alongside the tacos.
Hoodline previously ranked the taco truck-turned-favorite as Mesa's top spot for affordable tacos back in 2019, when its location at 1754 S. Greenfield Road stood out for value and flavor. Now the new Gilbert restaurant will sit at 3000 E. Ray Rd., inside the Barnone marketplace at Agritopia, according to WhatNow. Tacos Tijuana has not yet determined the exact opening date beyond the October timeframe, but the business says opening day will feature live mariachi music and additional promotions.
A Quonset Hut Built From Melted-Down Warplanes
The Barnone building itself carries an unusual history. The facility is housed in a converted 1950s Quonset hut, its arched structural trusses skinned in reclaimed aluminum salvaged from melted-down World War II aircraft, according to JAVA Magazine. Developer Joe Johnston repurposed the former farm barn into a craftsman marketplace designed to house micro-spaces for local makers and restaurateurs. The adaptive-reuse project, designed by Phoenix architect Jack DeBartolo and built by Caliente Construction, went on to earn a Merit Award at the 2017 American Institute of Architects Arizona Design Awards, according to Caliente Construction.
Barnone sits within Agritopia, a 166-acre master-planned agrihood created in 2000 on farmland the Johnston family purchased back in 1960, when Gilbert was known as the hay capital of the world for its alfalfa fields, according to The Packer. Rather than sell to conventional suburban developers, the family chose to preserve the farm as a residential village. The community's central 11-acre USDA-certified organic farm grows more than 45 varieties of fruits and vegetables, including citrus, peaches, Medjool dates, and olives, much of which supplies produce to neighborhood eateries under the Arizona Urban Agriculture Foundation.
Joining an Established Farm-to-Table Neighborhood
Tacos Tijuana will join other adaptive-reuse dining anchors already operating in Agritopia. The Johnston family previously converted their original 1960s ranch home into Joe's Farm Grill, later featured on Food Network's Diners, Drive-Ins and Dives, and turned an adjacent tractor shed into The Coffee Shop, the same report notes. Barnone is also home to 12 West Brewing's taproom and production operations, as Hoodline reported in its coverage of the Mesa brewery's summer closure.
The Gilbert address also puts Tacos Tijuana in one of the East Valley's most in-demand pockets. Agritopia's roughly 500 single-family homes lead the Town of Gilbert in annual neighborhood property appreciation at 6.3%, with a median list price of $724,995, according to US Tech Automations. That growth mirrors Gilbert's own transformation from a rural community of 5,717 residents in 1980 to an estimated population exceeding 275,000 in 2024, making it one of the fastest-growing municipalities in the Southwest, per the same data. For the Torres family, the timing lines up with a neighborhood that has both the customer base and the built-in food culture to match their scratch-kitchen approach.
