Bread Zeppelin, the Dallas-born chain known for hollowing out toasted baguettes and stuffing them with salad, is opening a Richardson location at 1920 N. Coit Road, Suite 201, on Wednesday. The new shop will operate from 10:30 a.m. to 9 p.m. daily once it opens, and the first 50 guests through the door on opening day will walk away with free Zeppelins for an entire year.
The Richardson spot marks the chain's 12th Texas location, according to CultureMap Dallas. Bread Zeppelin's signature move is taking a toasted artisan baguette, hollowing it out, and filling it with salad, housemade dressing and freshly prepared proteins, creating what the chain markets as a portable salad sandwich that requires no fork. Co-founder Troy Charhon said Richardson's community and surrounding families match the qualities Bread Zeppelin seeks in a new location, per the outlet's report.
The concept grew out of the founders’ earlier work in Dallas specialty-food retail: Troy Charhon and Andrew Schoellkopf, friends since high school, worked at Central Market and Eatzi’s, where they saw demand for salads. The first shop opened on MacArthur Boulevard in Las Colinas; the pair added a Plano location just over a year later. Their original idea was to make a salad easier to carry and eat on the go, a premise still built into the hollowed-baguette format. The founders’ early story traces the concept to those jobs and its first two locations.
Opening festivities kick off at 10 a.m. Wednesday with a ribbon cutting and a bread-coring ceremony, a nod to the chain's baguette-hollowing signature. The Ticket's The Hardline is scheduled to broadcast live from the Richardson dining room that morning, adding to the launch-day buzz described in the same report.
What's on the Menu (and What's Free)
Bread Zeppelin was founded by Charhon and Andrew Schoellkopf, and the chain has expanded quickly this year, opening a McKinney location in February and a Frisco shop in June. Schoellkopf said the Richardson location will offer made-to-order food, in-house dressings and bread pudding, according to CultureMap Dallas. Customers who skip the bread altogether can order any Zeppelin as a bowl instead.
The portable format and opening discounts fit broader restaurant habits: the National Restaurant Association found that 47% of U.S. adults pick up restaurant or deli takeout at least weekly, while value offers such as limited-time deals and discounts resonate with 8 in 10 off-premises customers. The association also identifies speed, ordering technology and loyalty programs as key to repeat takeout business—features reflected in Bread Zeppelin’s order-ahead app and promotions. The association’s 2025 off-premises survey provides that national context.
The menu isn't limited to sandwiches. Leftover baguette cores get repurposed into soups and bread pudding. Bread Zeppelin's chicken caesar sandwich landed on CultureMap's list of 16 great sandwiches in Dallas for fall 2024, and the chain was nominated for best sandwich in the 2026 CultureMap Tastemaker Awards.
Opening-Day Deals and October Promotions
Beyond the free-for-a-year giveaway, opening day includes 50 percent off entrées from 3 p.m. to 7 p.m. and a prize wheel offering free food and other rewards, according to the outlet's report. Richardson will also get a limited-time Pink Lady Zeppelin and bowl on opening day, made with grilled chicken, Pink Lady apples, candied pecans, red onion, goat cheese, an arcadian mix, spinach and champagne vinaigrette.
For every Pink Lady Zeppelin or bowl sold, Bread Zeppelin will donate $1 to Breast Cancer Can Stick It! at its DFW restaurants and to The Rose in Houston, continuing a Breast Cancer Awareness Month donation tradition the chain has now observed for three years. The promotions keep rolling into October: kids under 10 eat free on October 3 and 4, entrées are 25 percent off after 5 p.m. on October 5, and daily catering giveaways for 12 people begin that same day. Catering orders placed through [email protected] will also get a 25 percent discount through October 31.
App Perks for New Customers
Bread Zeppelin's app lets users earn points, receive exclusive offers and order ahead, according to a chain locations document. New app users can also claim a $5 discount on their first in-app order, the same document notes. With multiple locations already open across Texas and more on the way, the Richardson opening adds another stop for regulars chasing rewards points between salad-stuffed baguettes.
Bread Zeppelin is also promoting a franchise pathway as it looks beyond its existing Texas footprint. Its franchise program describes support with site selection, construction and operator training, alongside a process for prospective partners to review the franchise disclosure document and choose a territory. That gives the company another route for growth beyond opening company-branded restaurants itself. The company’s franchise site lists the program and its support services.
