A new butcher counter is about to anchor one of Southlake's busiest retail strips. New York Butcher Shoppe opens its doors at Southlake Marketplace on Sept. 18, selling housemade sausage, pork, chicken, wagyu beef, and Certified Angus Beef in both High Choice and Prime grades.

Local Owners Expand Their Footprint

The Southlake shop is owned and operated by Colleyville residents Ruth and Bryson Nokes under Nokes Craft Butchery, LLC, and it marks their second franchise location after they opened the brand's first Texas store in Colleyville, according to Community Impact. The new location will sit at 2001 W. Southlake Blvd., Suite 149, inside Southlake Marketplace, per Community Impact. In an email, Ruth Nokes said the business focuses on helping customers enjoy great meals from start to finish, and that the goal is to be more than a butcher shop — to become a trusted part of customers' routines, the outlet reports.

Beyond the meat counter, the shop will offer rotating seafood options such as crab cakes, along with wine and specialty grocery items. Southlake will also get catering, online ordering and delivery, and hot meals prepared six days a week, per the same account. The storefront's planned offerings also include wine alongside its specialty grocery items.

A $200,000 Build-Out in a Growing Retail Row

Commercial building records filed with the Texas Department of Licensing and Regulation registered a privately funded $200,000 interior finish-out for the 1,500-square-foot space. The store lands among a run of gourmet and family-oriented tenants at Southlake Marketplace, including Rise Soufflé, Play Street Museum, and DeLucca Gaucho Pizza & Wine, on a stretch of West Southlake Boulevard, according to Community Impact.

The grand opening celebration is set for Sept. 28 and will include giveaways along with meat and wine samplings, per Community Impact. The first 50 customers that day will each receive a New York strip steak.

Part of a 27-Year-Old Franchise's Texas Push

New York Butcher Shoppe was founded in 1999 in Mount Pleasant, South Carolina, and has since expanded across the Southeastern and Southwestern United States, placing the Southlake opening within the chain's 27-year operational history, according to PitchBook. Prepared sides, entrées, and grab-and-go meals are part of the brand's product mix, underscoring why hot meals and catering are core to the Southlake store's plan rather than an afterthought.

The chain's meat program includes Certified Angus Beef and heritage-breed pork, paired with housemade specialty items like crab cakes and sausages, the outlet reports.

Why Southlake Fits the Brand's Playbook

The Southlake opening reflects the area's appeal to premium specialty grocers, and the shop's prepared meals give it room to grow alongside neighbors like Rise Soufflé and DeLucca in the same shopping center.

The Southlake opening will combine a butcher counter, specialty groceries, ready-to-eat meals, and wine offerings to anchor a suburban retail district — much like what the Nokeses are betting on in Southlake.
