A New York-based Japanese grocery chain is about to make its West Coast debut in Cupertino, opening a sprawling market inside the space once occupied by Sprouts on Stevens Creek Boulevard. Hashi Market will welcome shoppers on Friday, Oct. 9, 2026, marking the company's first store outside the East Coast.

The new store will fill the former Sprouts location in the Crossroads Center at Stevens Creek Boulevard and South De Anza Boulevard, according to East Bay Times. The address, 20558 Stevens Creek Blvd., puts the market in a well-trafficked retail corridor, and the store itself will span 20,900 square feet, according to a report from NewsBreak.

Hashi Market bills itself as a hybrid grocery and department store, and the Cupertino location will lean into that mini department store concept. Shoppers can expect fresh fruits and vegetables, a sushi counter, matcha drinks and snacks, skincare products, and even kitchen appliances stocked alongside the grocery aisles, per the seed reporting.

A Chain With NYC Roots and Big Expansion Plans

Hashi Market currently operates six stores in New York City, and the Cupertino opening represents its first step onto the West Coast. The company is owned by Takayama International Inc., according to SF Funcheap, which also reported that the chain's offerings include a home goods section and catering services.

The company isn't stopping at one Bay Area store. Hashi Market is reportedly exploring additional sites in Milpitas, San Mateo and Union City, and it's also looking at potential locations in Colorado and Massachusetts. Altogether, the chain expects about 10 new stores to open in the coming months, per the East Bay Times report.

Earlier reporting had pointed to different timelines for the Cupertino debut. SF Funcheap had described the store as set to open in May or June 2025, while a December 2025 Palo Alto Online piece simply noted Hashi Market was “expected to open later in Cupertino” without a firm date. The Oct. 9, 2026 opening confirmed by East Bay Times represents the latest and most specific timeline for the store.

Joining an Already Crowded Japanese Grocery Scene

Hashi Market won't be alone in offering Japanese groceries to South Bay shoppers. The Cupertino store sits less than a mile from Tokyo Central, another Japanese grocery store already operating in the area, according to SF Funcheap's earlier coverage.

That proximity fits into a much larger pattern. New Korean, Japanese and Filipino grocery stores have burst onto the scene across the Peninsula recently, reflecting rising demand for Asian food in Silicon Valley, according to Palo Alto Online. The San Francisco Chronicle has reported that at least seven more large Asian grocery stores were slated to arrive in the Bay Area, a wave tied to the region's Asian population growing by 30% between 2010 and 2020 according to census data cited in that reporting.

Other chains have been riding the same wave. Osaka Marketplace, which opened its first location in Fremont in 2021, expanded into a second Bay Area store in Foster City inside a former Lucky grocery space, featuring a Japanese hot buffet, handmade onigiri, and Japanese and Chinese deli items, according to KRON4. That chain also planned a third store in Pleasant Hill the following summer, with 12 additional regional locations envisioned over the next decade.

For now, Cupertino shoppers will get their first look at Hashi Market's West Coast approach when doors open Oct. 9. Beyond the immediate opening, the company has also signaled plans for further California expansion, with potential locations near San Jose and Irvine under consideration, according to SF Funcheap.
