A new fast-casual restaurant has quietly begun serving 24-hour-marinated charcoal chicken in Gaithersburg, taking over the storefront that California Tortilla vacated late last year. Guapo's GO began a soft opening at 12211 Darnestown Road, directly across from Quince Orchard High School, marking the first Maryland location for the fast-casual offshoot of the local Guapo's restaurant group.
The opening was first reported by The MoCo Show, which detailed the new menu and the site's recent history. Guapo's GO is operated by the same family behind the full-service Guapo's restaurant that has long drawn crowds at Gaithersburg's Rio Lakefront, according to the outlet's reporting. That flagship, which opened in 1994, is considered one of the highest-volume and highest-grossing dining spots in Montgomery County, per The MoCo Show's separate coverage of the family's regional footprint.
From California Tortilla to Charcoal Chicken
The Darnestown Road address became available after California Tortilla shut its Gaithersburg doors for good on November 2, 2025 — the chain's second Gaithersburg closure within a single year, and one that erased the brand's presence from the city entirely, the same MoCo Show report on the closure noted. California Tortilla itself has deep local roots: the scratch-made Tex-Mex concept was founded in Bethesda in August 1995 by Pam Felix and Alan Cohen before growing into a Mid-Atlantic franchise network.
Now that space sits inside Quince Orchard Marketplace, an 80,000-square-foot grocery-anchored shopping center anchored by a 50,000-square-foot Safeway at the busy intersection of Quince Orchard Road and Darnestown Road, according to a LoopNet listing for the property. The high-traffic corner gives Guapo's GO a built-in stream of grocery shoppers and students from the high school across the street.
A Family Business, Not a Franchise
Guapo's traces its roots to 1990, when the late Hector Rincón — a Colombian immigrant whose family settled in Northern Virginia in the late 1970s — opened the original restaurant at 4515 Wisconsin Avenue NW in Washington, D.C.'s Tenleytown neighborhood, according to a profile from TysonsToday. Unlike many regional fast-casual chains built on corporate franchising, all of the Rincón family's full-service Guapo's restaurants and Guapo's GO locations remain 100 percent family-owned and operated across three generations, the same profile reports.
The Rincón family currently runs eight full-service Guapo's Cocina & Bar restaurants spread across D.C., Maryland, and Virginia, including waterfront locations in Georgetown and Shirlington alongside Montgomery County restaurants in Bethesda and Gaithersburg. Hoodline covered the Georgetown waterfront debut back in 2018, and the brand has since become a familiar name across the region's Tex-Mex scene.
This is not the Rincón family's first attempt at a fast-casual format in Gaithersburg. Guapo's previously operated a similar quick-service restaurant at 411 N. Frederick Road from December 2010 to 2017, per the MoCo Show's report, before that space was later taken over by Ixtapalapa Taqueria. Guapo's GO already has three locations open in Virginia — in Herndon, Manassas Park, and Woodbridge — making the Gaithersburg outpost its first foray across the Potomac into Maryland.
What's on the Menu
The Guapo's GO menu centers on charcoal chicken marinated for 24 hours, alongside a wide spread that includes birria, crispy and street tacos, customizable burritos and bowls, pupusas, enchiladas, quesadillas, and fajitas. Rounding things out are chaufa rice, chicken and steak-and-cheese sandwiches, and the restaurant's own Guapo's GO smashburger. Family platters and a children's menu are also available for larger orders, and sides run from rice and beans, plantains, and yuca to mac and cheese and steak fries.
Guapo's GO locations operate daily from 10 a.m. to 10 p.m. Sunday through Thursday and 10 a.m. to 11 p.m. on Fridays and Saturdays, with online ordering, takeout, delivery, and dine-in all available, according to the company's own location listings. The Gaithersburg opening arrives amid a broader wave of fast-casual and quick-service growth across Montgomery County this year, with ghost kitchens, food halls, and spinoff concepts increasingly targeting commuter corridors in Burtonsville, Rockville, and Gaithersburg, as Hoodline has previously reported.
