The chain already operates three locations in the Heights, Montrose and Spring Branch areas, each built around an interactive counter where diners can watch their food being prepared. The Bellaire Boulevard build-out will mark the fourth.

The site itself carries a distinct commercial history. Commercial real estate records show the property was previously a second-generation Jack in the Box with a drive-thru, situated just outside the West University Place municipal boundary, according to LoopNet. That neighborhood carries serious buying power: West University Place is home to more than 15,000 residents and had a median residential sales price of $2.17 million as of 2025-2026, per real estate data cited by Brooks Ballard Properties, making it one of Greater Houston's highest-income residential enclaves.

Construction Timeline and Budget

An August 2026 filing with the Texas Department of Licensing and Regulation lays out the scope of the project: a $500,000 renovation converting the 1,440-square-foot fast-food building into a full restaurant, with construction scheduled to run from November 1, 2026, through April 1, 2027. Community Impact separately reports that construction on the Bellaire location is expected to begin in late September, with officials anticipating an opening sometime in late 2026 or early 2027 — a timeline that runs slightly ahead of the state filing's April 2027 completion target for the permitted construction window.

Once open, the Bellaire Boulevard location will offer the same menu built around Handies Douzo's signature hand rolls, alongside specialty rolls including spicy hotate, masutoro and A5 wagyu, per Community Impact's reporting. The restaurant also serves alcoholic and non-alcoholic drinks, including Onikoroshi Demon Slayer sake and melon cream soda. Handies Douzo has developed a reputation for sourcing high-grade nori seaweed from Japan's Ariake Sea at up to six times standard commercial cost and swapping in habanero aioli instead of sesame oil for its spicy tuna hand rolls, according to Community Impact's earlier coverage of the brand.

Part of a Bigger Duckstache Push

Handies Douzo is one of seven chef-driven concepts brought to fruition by Duckstache Hospitality, the restaurant group founded in 2019 by co-founder chefs Daniel Lee and Patrick Pham along with business partner and CFO C.J. Short. The group's portfolio also includes Aiko, Kokoro Sushi & Yakitori, Kokoro Hand Roll & Sushi Bar, Bar Doko, Doko and Himari, and Duckstache says it seeks to reinvent traditional Japanese cuisine through design-forward spaces and modern aesthetics.

The Bellaire filing is only the latest in a run of expansion announcements. Duckstache has also leased space this year for a Handies Douzo at Central Park Post Oak in Uptown and another at East Blocks, 1107 Hutchins St., in EaDo — a project Hoodline previously reported on filing state plans. The East Blocks site spans roughly 2,000 square feet, while the Post Oak location features 26 counter seats, according to CultureMap Houston.

From Food Hall Counter to Multi-City Brand

Pham and Lee trained under James Beard Award-winning chef Tyson Cole at Uchi Houston, where Pham rose to head sushi chef at age 24, according to the Southern Smoke Foundation. Their first venture, Kokoro, launched inside Downtown Houston's Bravery Chef Hall in July 2019 and set first-month sales records there before the pair opened the original Handies Douzo in the Heights that December, the Houston Press reported. Kokoro remains the only original food vendor still operating at Bravery Chef Hall.

Duckstache's ambitions have stretched beyond Houston as well. The group opened a Kokoro location on Alserkal Avenue in Dubai in May 2024, then added a second UAE outpost in early 2025 after two regular Houston customers, Tamer Elkhayat and Faisal Yabroudi, offered to help finance the overseas growth. The brand has also picked up local recognition, with Handies Douzo earning a nomination for Neighborhood Restaurant of the Year in CultureMap's 2026 Tastemaker Awards and sister concept Aiko winning Best New Restaurant in 2023.

How the compact, 1,440-square-foot former drive-thru building will be reshaped to accommodate Handies Douzo's signature intimate, U-shaped counter format remains to be seen. The Spring Branch location, which opened in August 2025 at 9936 Westview Drive after overcoming a week-long delay caused by illegal dumping in its parking lot, features a 26-seat U-shaped counter that has become something of a template for the brand's newer locations.
