
A new neighborhood market inspired by Hudson Valley farms and producers is set to open on Hudson Street, with offerings ranging from ribeye and sesame tuna steaks to a dog food line made with Hudson Valley brook trout. H. Valley, the project from chef Austin Johnson and restaurateur Eytan Sugarman's Hudson Street Hospitality, is set to open at 569 Hudson Street in the West Village, offering breads, pastries, prepared foods, ready-to-cook proteins and groceries under one roof.
According to Patch, the market was set to open Sept. 23. The concept itself is fully mapped out: a market designed, per Patch, to be a one-stop source of coffee, matcha, breads, pastries, breakfast sandwiches, prepared meals, fresh produce and housemade sauces for the neighborhood.
A Menu Built Around the Hudson Valley
The market's name is no accident — its offerings are meant to channel the region's farms. Produce comes from Campo Rosso Farm, Norwich Meadows Farm, Eckerton Hill Farm and Migliorelli Farm, per the same Patch report. Shoppers looking to cook at home will find ready-to-cook proteins including ribeye, salmon, sesame tuna steaks and crispy duck leg, the outlet notes, alongside a grab-and-go section built around rotisserie chicken, grilled fish, roasted potatoes and seasonal vegetables.
Sandwiches and breakfast fare round out the daily lineup, with bacon-egg-and-cheese and egg-white breakfast sandwiches in the morning and lunch options like pork, roast beef and tuna salad. The pantry side stretches to pasta sauces, soups, fresh and frozen pasta, lasagna and pizza, according to the report. Even pets get a seat at the table: the market's Dion's Diet line uses Hudson Valley brook trout, Bell & Evans chicken and Long Island duck breast, Patch reports.
A Kitchen Pedigree From One White Street
Austin Johnson previously worked as executive chef of Michelin-starred One White Street and Rigor Hill Market, according to Cititour. That same outlet reports that Johnson plans to bring the omelette bar he previously offered at Rigor Hill Market to the new space. For pastries, Johnson is teaming up again with his former One White Street collaborator, pastry chef Grayson Claes, who is providing the pastries, ice creams and croissants, according to Tribeca Citizen.
The same Tribeca Citizen report notes the space is expected to convert into a small wine bar on weekend nights, with Johnson working out of the kitchen. Cititour adds that H. Valley plans to host private dinners, culinary events, chef collaborations and pop-ups down the line.
Design Details and a Corner for Kids
The 24-seat space was designed by Johnson's wife, Amanda Johnson, who sourced antiques from across the Northeast for the interior, Patch reports. Families shopping the market will find Lucky's Corner, a dedicated children's area described in the same report as including an aquarium and coloring books.
Hours and a Weekly Farmers Market
H. Valley will initially run Wednesday through Sunday from 7 a.m. to 8 p.m., with plans to eventually expand to all seven days, according to Patch. The market will also host a Friday farmers market from 8 a.m. to 2 p.m. featuring farmers and makers from the Hudson Valley region, the outlet reports — giving West Village shoppers a weekly taste of the Hudson Valley.
