
A former bedside nurse who reinvented herself as one of Louisville's busiest bakers is opening a French bistro next door to her Norton Commons café. Debi Hatton, who runs Crust & Crumb Bakery & Café at 6301 Meeting St., will debut Brisé, a modern French-inspired bistro, on September 16.
The new concept marks the second phase of Hatton's build-out at the Norton Commons address, according to the Louisville Courier Journal, whose reporting by Amanda Hancock detailed Hatton's plans to expand next door with the bistro roughly two years after opening Crust & Crumb. Hatton's path to the storefront began well before either concept existed: she spent years as a bedside nurse at the University of Louisville and as a nursing professor at Bellarmine University before shifting to full-time baking following the COVID-19 pandemic and the death of her father from ALS, according to Stroll NoCo.
Hatton sold her sourdough loaves and European pastries through markets and small orders, Stroll NoCo reports. That grassroots run built the following that eventually justified a much larger bet: an approximately $500,000 build-out of the 3,500-square-foot storefront at 6301 Meeting St., which opened as Crust & Crumb Bakery & Café in July 2024, according to Louisville Business First.
Inside the New Orleans-Style Storefront
The building itself carries its own design pedigree. It was developed and is still owned by Louisville construction firm Ramage Co., per Louisville Business First. Brisé will include outdoor dining.
According to the Louisville Metro Department of Public Health and Wellness, food-service establishments in Louisville and Jefferson County have been required to hold both local and state food permits since January 1, 2019. Louisville Metro Open Data publishes restaurant inspection dates, grades, scores and locations for all establishments for the past year.
Inside, Crust & Crumb features a custom 10-row by 40-column mechanical split-flap menu display made by Oat Foundry. The rotating-flap board, more commonly associated with old train and airport terminals, announces daily offerings.
A Second Concept for a Growing Dining Corridor
By adding Brisé, Hatton is expanding the evening dining options available within that same New Orleans-style commercial space, giving Norton Commons residents a French-inspired option beyond the bakery's daytime offerings. Norton Commons is a northeastern Jefferson County development with residences and walkable commercial businesses. That walkable layout gives neighborhood-scale concepts like Brisé a built-in customer base within walking distance.
The neighborhood's North Village section, near the Meeting Street commercial spaces, also stands out for another reason entirely: it is described as the largest residential geothermal development under construction in the United States, with all of its structures relying on 100 percent geothermal heating and cooling, per Executive Home Rentals Louisville.
Norton Commons' official website describes the development as a community bustling with businesses and full of year-round events.
Joining Louisville's French Dining Scene
Brisé will not be the only French option in Louisville's East End, but it brings a distinctly suburban-village setting to Louisville's established French dining scene.
Meeting Street's commercial corridor has been steadily filling in around Crust & Crumb in recent years. New concepts have found a home in Norton Commons' walkable town center, adding a French bistro to a corridor that has increasingly become a dining destination in its own right.
