A Valley hospitality group known for its bourbon-soaked steakhouses is going Italian. Bourbon & Bones owner Square One Concepts has announced plans to bring a new Italian chophouse called Bistecca & Bones to High Street at CityNorth, near 56th Street and Deer Valley Drive in Phoenix, with an opening targeted for spring 2027.
The concept borrows heavily from Florentine steakhouse tradition, according to KTAR News 92.3 FM, which reports that Bistecca & Bones will serve premium cuts and house-made fresh pastas alongside its signature dish: the Bistecca Fiorentina, a 40-ounce porterhouse served flaming and sliced tableside. Square One Concepts founder and CEO S. Barrett Rinzler said the concept was inspired by Italian and Tuscan dining traditions, the station reports.
Beyond the showpiece porterhouse, the restaurant is leaning into theatrical, hands-on service. Bistecca & Bones will feature Caesar salads prepared directly at guests' tables, according to WhatNow, which also reports the restaurant will display fresh fish and shellfish for guests to see before ordering.
A Sprawling Space Built for Wine and Private Events
The scale of the project matches its ambition. The main dining room alone spans approximately 7,500 square feet and will include an extensive wine collection and a large bar, per the station's report. A 700-square-foot patio and a 2,200-square-foot private dining room capable of hosting 100 guests round out the footprint.
Inside, designers are leaning into old-world elegance. The interior is inspired by Italianate architecture and design, featuring rich wood tones, natural stone, marble accents and layered lighting, the same account notes.
Not a One-Off — A Second Location Already Planned
Bistecca & Bones is not meant to be a standalone experiment. Square One Concepts has already planned a second location at The Sydney, a $100 million, 26-acre retail and entertainment development near 90th Street and Loop 101 on Salt River Pima-Maricopa Indian Community land, according to WhatNow. That second venue is planned as a roughly 6,800-square-foot, two-story building, with the upper floor set to house a second location of Old Town Ski Lodge, complete with converted gondolas and an ice bar built into a walk-in freezer.
The Bourbon & Bones Pedigree
Bistecca & Bones is a spinoff of Bourbon & Bones Chophouse and Bar, which launched its flagship location in Old Town Scottsdale in 2016 before expanding to Gilbert's SanTan Village in 2021 and Peoria's 83 Marketplace in May 2023, and also operates a lounge inside Chase Field, according to the City of Peoria. The original steakhouse concept also has a drinks list featuring bourbon and whiskey, according to City Lifestyle.
The Peoria location offers a glimpse of how far Square One goes on interior design. That restaurant's build-out integrated custom thematic touches including meat-hook-inspired light fixtures and warped sound beams symbolizing the restaurant’s “bones,” per Aline Architecture Concepts, illustrating the kind of custom styling the group tends to build into its fine-dining spaces.
Rinzler's Broader Hospitality Portfolio
Rinzler has created, designed, and managed more than 20 individual hospitality and nightlife concepts across Arizona, California, and Colorado, including Wasted Grain and Nook Kitchen, according to Youtech. Square One's casual chain Cold Beers & Cheeseburgers is one of its brands, per Tucson Foodie.
